- I love re-creating foods I used to eat, but making them vegan and healthier! In this video I make some smoked salmon using carrots, a vegan BLT and the BEST vegan nachos you are ever going to have!
Just because you go vegan doesn't mean you can't still enjoy the flavours that you used to know and love.

Smoked Salmon (Carrot) Recipe:
2-3 Large Carrots
1 tbsp tamari
1 tbsp water
1 tbsp liquid smoke
1 tbsp olive oil
2 tsp maple syrup
1/2 tsp onion powder
1/4 tsp garlic powder
1/2 tsp rice vinegar
1-2 tsp seaweed flakes
Peel and then boil carrots until soft and cooked throughout. 7-15 minutes depending on the size.
Add carrots and marinade into a small bowl and store in the fridge overnight. Mix if necessary to ensure all the carrots get coated in the marinade.
Add to bagel with vegan cream cheese.
Top with red onion, dill, capers.

My family (I'm the only vegan) has smoked salmon with all of the fixin's in your video every Christmas morning. Can't wait to try your carrot version!!! Also....nachos are everything.....
Instead of the crumbled tofu you should try crumbling tempeh and marinating it in buffalo sauce. Also add tofutti sour cream 👌
hey...I'm from Brazil, vegan about 6 years.....and there's a meal my father used to preprare every week. I loved it! It was rice (sautéed with garlic and salt), braised chicken (thigh and drumstick) with potatoes and carrots (obviously everything prepared with a good amount of onion and garlic, like all Brazilian food) and also tomato (and tomtato sauce).

This comment is about the Thanksgiving stuffing recipe you folks laid on us a couple of years ago, and which I've made each Thanksgiving and Christmas ever since. It is so well-received, my little granddaughter even asked to have it prepared for her in Japan last year, where she and her parents were visiting family over Christmas! I felt compelled to write as I have just finished making it. This year I also hit on the bright idea of putting the pecans through my high-powered blender, reasoning that it would get that flavour to pervade the dish even more. It worked like a hot damn! Thank you so much, Crystal and Derek, on behalf of myself and my family!

First of all, you're amazing and I thank you so much for everything you do. I've watched you since WAY back, when Harry was still alive and you were justifying feeding him regular cat food since he was a carnivore.
I have never fully transitioned into a plant based diet, but you have helped me incorporate so many micronutrient dense options into my meals that I would have never considered before if not for your content.
I've watched you for shy of a decade it feels, give or take 5 - 6 years, and I still watch your content consistently. Thanks for everything you do!

You can also use roasted bell pepper for a salmon substitute. The texture is more similar than carrots in my opinion and you can just get a jar and marinate it, saves some cooking time. For the TLT, you could add beet juice to the tofu for the colour.
Looks yummy! I got to say, I love the fact that you eat BREAD!!!! I know not everybody can, but many WFPB influencers got the 'hate on' for bread. I buy the same sprouted bread that you get at Costco, and love it with almond butter and bananas!!!
BLTs made with fried dulse as the bacon is yummy too!

I eat comfort foods and they are: whole wheat bread, and then whole wheat pasta with black beans. I eat either of these foods every single day. I also add vegetables to get all nutrient, and throw in oatmeal and fruits.
The recipes I have are simple and I just stick to simple. There's some foods I avoid that I overeat and peanuts are like that.

We make sandwiches we call BLOATs: (veggie) bacon, lettuce, onion, (smashed) avocado and tomatoes. So good!

Great recipes, I've tried other versions of the Lox carrot where the marinade includes some capers plus the brine from capers jar and fresh dill, its quite nice, however your recipe has more liquid smoke in it, which I think would work well.😊

Rainbow Plant Life has an awesome shephard's pie recipe...you have to tweak it a bit because she uses quite a bit of oil, but that's not hard to do. It is my favourite plant based version, so far.

So my favorite comfort food is easily lasagna, and I recently made the vegan lasagna recipe from the cook book "minimalist baker's everyday cooking" by dana Schultz and it was SO delicious! I even gave some to my mom and grandma who aren't vegan and they loved it just as much as regular lasagna! You have to try it!! I love your videos sm btw, thank you for your content!
Excellent video! It made me think of a great vegan restaurant called Cornbread Cafe that recently closed down in Eugene, Oregon. They served tremendous vegan comfort food!

Sirloin steak, with eggs & new potatoes, needs only a little salt & pepper. I'm no longer going to make mild, fish curries, as the delicate flavour of the recently sourced cod/haddock is easily swamped. Chicken, fried golden in salted butter.. a snack requiring no plants. [ I do luvs me sum froot 'n' veg too! ]

You just eat it as cold slabs in it?? I still use MorningStar Farms fake bacon strips, because I’m vegetarian (although the company said they’re going to be making their products vegan soon - all it has extra in it that’s not vegan is egg whites).

I love a quiche with ham and broccoli. Still trying to find a good vegan version. I would be happy if you give it a shot :)
If you search my chickpea fritters here on YT (also a recipe in my ebook Easy Vegan Comfort Meals) it’s very similar to that. You just have to sub out some of the ingredients. Add some smoked tofu as the ham and broccoli before cooking. They are actually just so good! But it would be good to show them as a quiche too.

My husband is a meat-eater and is really into smoking his meat. When he does his meat, I have him throw on a couple blocks of tofu (cut in half horizontally) and... dang... so good! I don't add anything to it at all. It's great on it's own! And it's much cheaper than buying it pre-smoked. : ) As far as recipes I miss... beef stew and cornbread - and I'm doing oil-free as well. I'd love to see your take on these, Derek!

Put some onion powder on your TLT its a game changer!
To really take the sandwich over the top is look for Cherokee Purple tomatoes, an heirloom. I ate tomato sandwiches as long as the tomatoes were available. I’ll grow my own next year.
I wish we had those kinda tomatoes available here.

I can’t say that I miss much after several years, but a random thing I used to like was French onion soup, and it is obviously just the perfect cheese under the broiler, and I don’t know if vegan cheese is quite there yet. (But the advancement of vegan poutine cheese gives me hope!) Definitely going to try your nachos, though-they look amazing!

I still don't like the Daiya cheese. I use Heart Healthy which melts really well & tastes good. We have a vegan pizza place here in California in Grand Terrace, great vegan pizza. It's called The Vegan Korner. They also have other items. The nachos look yummy! I usually use pinto beans for mine.

Love your videos Derek! I've been deconstructing processed foods like you to come up with my own recipes. So much easier and cheaper... Anyway, which kind of seaweed flakes did you use? Dulse? Kombu? Other?
I used a bag of mixed flaked seaweeds - but dulse would work great!

Have you done a “chicken” sandwich or “burger” my hubby is actually beginning to try the vegan lifestyle after me being on it a year but he’s a huge burger, southern meat and potatoes guy lol. Potatoes are great! Lol but trying to find an excellent “burger “ for him b/c I think that and pizza are gonna w the difficult part.

Good for you. Based on the subject of this video… you must be starting to feel the cooler days of Canada starting. ‘Bacon’ can be made also with eggplant. There is a recipe at medical medium website. I never really liked the bacon anyways.
