FUGU Fish : Filleting Most Poisonous FISH in the World

- Fugu is the name given to a species of Pufferfish that has had a special appeal among Japanese seafood customers for many years. The fish- also called porcupinefish- has an ability to concentrate tetrodotoxin in its liver. This toxin is a very potent neurotoxin that shuts down electrical signals in nerves, according to a recent article in The New York Times. The substance "may produce dizziness, exhaustion, headache, nausea or difficulty of breathing in individuals who consume it. For 50 to 80% of the victims of overindulgence, death follows within four to 24 hours".
The challenge for expert Fugi chefs is to leave just enough tetrodotoxin in the preparation of pufferfish so that the customer is left with a pleasant tingling or numbing sensation to the lips and tongue. "Not enough to kill, just enough to thrill", is the buzz word. Since 1958, only specially licenced chefs can prepare and sell Fugi to the public. A 2-3 year apprenticeship is generally required before being allowed to take an official test, including a practical test of preparing a Fugu dish and then eating it.
Japanese fish farmers are now mass-producing Fugu as harmless as goldfish, states the New York Times article. By controlling the feed that the fish receives, toxic build-up of tetrodotoxin can be avoided. This technology is now meeting strong resistance from both government and the traditional fishing industry. Governments are concerned about the consistency of toxic-free farmed Pufferfish, and fishers of the wild version are concerned about losing market share. Stay tuned.

Glad people are human enough to feel bad for the pufferfish, but to put your mind at ease, that first slice to the back of its head, it’s like a spinal nervous system that pretty much shuts down it’s body, it can’t feel or anything after that, then it pretty much just bleeds out peacefully after that. Looks brutal, but it would put up a fuss if it hurt i promise.

They have to keep it alive as much as possible actually, once he is dead all the toxins are released to its body making it inedible. So the puffer fish is still alive until they rip the head off.

@@josiahsankargaming8167 it's already paralyzed and numb once the chef sliced the top of it's head in the beginning (basically severed it's spine) it didn't feel any pain throughout the process.

It's not as toxic as mainstream media tells you. When I was a kid we ate a pufferfish without knowing it is poisonous. It just makes you feel numb for few hours and that's that
The tetrodotoxin which is 1000 times deadlier than cynide and there is no antidote for it. TTX is in its liver and ovaries(mostly), if you don t puncture the innards of the fish and skin it well you should be fine however it s dangerous so i wouldn t try..
Doing some research about fugu fish, I have found that the poison comes from bacteria this fish eats in the wild, fugu fish living in aquariums don’t have access to the bacteria therefore they can’t produce the toxin. Also, if the toxin seems to be mostly deposit in the internal organs and they are not cutting open these organs right there on the table, they remove then and they get separated form the meat. In conclusion, this people have their fish in tanks and probably they may be reproduced in captivity and for extra security they are careful not to cut the internal organs near the meat.

The chef cannot kill the fish as when it dies it’s toxins travel through the fish right to the skin so they need to keep it alive as long as possible.
