Hey! Sounds like a worthy undertaking!
I'd start by determining which electrical components require 6v reducers and which you want to keep. So things like gauges, radio, blower motor...etc.
There's quite a few ways to reduce voltage or have those components updated to 12v. Start there and get yourself a list of items to buy.
Then decide how many circuits you want in the car and buy a universal wire harness to accommodate it.
Personally I really like Speedway's harnesses and Painless is also an excellent brand. Rebel Wire I hear mentioned a lot too.
It's a big job that requires excellent planning but I don't actually think it's that difficult.
Make sure to have a multimeter, quality wire strippers, quality solder iron and use Super33 electrical tape and shrink tube. Don't go cheap on anything to protect wires and connections.
