3 tablespoons of olive oil is not drowning the dish with fat . In the end it will amount to a teaspoon per person . And if you want to brown the onions you need oil . Browning the onions is what will give flavour to the dish . You can choose to cook the onions in water , yes , but forget the taste . I will try the recipe as given except that black beans here in France are so difficult to find that I'll use white beans .
Pink beans ? Never seen any ( nor tried obviously ) and small red beans would be in a can and I avoid cans when possible. But we have plenty of different sorts of dried white beans .
I brown and sauté without oil all the time. The flavor of the vegetable and aromatics is wonderful all on their own. No oil needed. It is a different taste than when using oil but it is still the taste of the vegetable.

I made this dish last night for supper and I absolutely love it, I'm the only one that will eat it in the house so I got plenty for the next day, I also find that it tastes pretty good cold right from the fridge. Thank you for this wonderful recipe.
Beautiful presentation!!! Something you may be interested in knowing is that white rice has quite a bit of arsenic in it and brown rice has even more. In order to get a good amount of it out, you can boil your rice for 8- 10 minutes and then rinse it thoroughly through a seive before adding it to your dish to cook the remainder of your delicious looking food. I will definately be giving this a try. Thank you so much!

Average of white rice is 92 ppb, and brown rice is 154 ppb. Apparently the numbers can be reduced significantly by parboiling first. Some rice is sold parboiled.
First let me say that I love your recipes FoodImpromptu! With that said, I made a few swaps on this dish that others might be interested in. I swapped quinoa for the rice, and chickpeas (2 cans) for the black beans. I pan fried the chickpeas with olive oil and garlic salt, and added them at the very end. The end result was very good, but I had a Ratatouille moment and decided to add a 20 oz can of crushed pineapple. The end result was total fire (my daughter's words)... sooo good! I will say that it was a little on the extra extra moist side of things. Next time, I will increase the quinoa to 1 +1/4 cup, and drop fresh tomatoes by 50g.
I made this dish today. It was very easy once I prepped the ingredients and blended the tomato mixture. I live in the Rockies (high altitude) so it takes twice as long to cook, generally. It's very tasty and love having lots leftover for the freezer! Thank you!!
I haven't tried it YET but... GREAT recipe ! Thank you for including the full recipe. All I had to do was to remove the metric measurements. I appreciate your helpful tips like: "Adding salt to onions will release it's moisture and help it cook faster, so don’t skip it. " Also will be trying your "Cucumber Pasta Salad" 😋😋

You are such a savvy cook! Most of us in North America and Europe are simply incapable of cooking like the people of the Middle East and Asia. I’ve learned how to use spices, herbs add chopped parsley on rice in Lebanon and how to use coriander and coconut milk in Malaysia and Indonesia. You are brilliant !

I have a challenge for you if you want, could you make a hot vegetarian meal that does not contain zucchini, squash, eggplant, tomato, ginger, chili, chickpeas or beans? This is a very common dish from south of Iran. Without ginger and coconut milk We make this rice every week with different beans. We also make it spicy

Use pink beans or small red beans instead of white
Chickpeas would be a great alternative! Especially with the coconut milk.
