I’ve been to both contramar and Entremar in CDMX. Amazing restaurants! My favorite dish from her restaurant is definitely the tuna tostadas. I think that dish has been copied all across Mexico and the world.
This fish is absolutely incredible and the restaurant Contramar in Mexico City is a MUST!!!

The content of sauces made is usually higher than the usage for said recipe. I mean you're adding so many things such as tomatoes, chillies, garlic, etc. that the volume will evidently end up becoming larger than your intended usage.
that's what we do as chefs. Always big batches. Even when i go to my parent's house and cook for 5 haha

Well, I don’t suppose the spoon used to rub the red salsa on the fish was contaminated with any possible microbes from the fish. Also the tail kept intact might still have contaminants since it didn’t come in contact with the grill. Otherwise, red snapper is a great fish.
