    I lived in Hong Kong 5 years ago, in Kennedy Town, and there was a sandwich shop there called Sunday's Grocery (which I later found out was a part of this guy's franchise that includes Yardbird). They sold 8 different sandwiches, each inspired by another global cuisine. I wanted to try all 8 of them before I left the city, but after trying this baby, I never even considered touching one of the others. It was just hands down the best sandwich I'd ever had and I knew it couldn't be topped! I've been trying to recreate it since I got back home, but never pulled it off. For 5 damn years, I've been left with only dreams of how glorious this sandwich truly was.
    When I saw this video I damn near pissed myself. Looks like, after 5 long, sultry, grueling years, I'll finally get to sink my teeth into that beauty once again. God bless, and THANK YOU SIR.

      I'll be real I refuse to even keep clean dishes in my sink because no matter how much I scrub my sink its still connected to the sewer and bacteria travels absurdly fast.
      Just like how I wash my hands AND wear gloves. I'm not getting salmonella from some tiny cut I didn't know about fuuuuuuuuuuuuuck that, you guys can be risky biskys not me

      @@AlexiasPlaylist I take kitchen hygiene pretty seriously, but I don't wear gloves when cooking. An exception is if I'm making spicy things like kimchi. Using gloves for everything (at home) creates extra waste, and many gloves are not food safe meaning you're actually consuming toxins anyways. I understand there's a greater need in a professional setting, but not at home.

      @@AlexiasPlaylist Agree with the sink, just that I'd never let my vegetables or meat lay bare on the sink when i wash em or after washing em. Its not just germs, but the detergents or soaps we use to wash dishes or hands. Don't know about the gloves, washing hand with soap is enough for me. But nothing wrong with being safe than sorry. Must be a pain trying to wear gloves with wet hand or even damp hand tho XD

      Just as a side note, I noticed he is using a hand made japanese knife.
      Most chefs I see just use a VG-10 steel knife, like a shun, or they use wusthof.
      Has little to do with how the chef handles the knife, just an observation.

    It's funny about the gloves, I'm a hands on girl because otherwise I can't feel the texture of what I'm making. My hands tell me everything I need to know when I'm cooking, especially since I do a LOT of pastry baking, so I need to feel of it's too dry or too sticky, etc. But there is a thing with korean cooking (my husband is korean) about using your hands rather than utensils to stir and make, even if they are using gloves hands for products that must be fermented (to keep it very sanitary because fermentation is a whole other beast), they are still mixing with their hands because there is an essence that effects the flavor that can only come from using your hands.

    Great video and love this dude! Thanks munchies for this great content. I also appreciate that he mentions composting the outside of the cabbage, but running the onion under water for 10 minutes? depending on the flow of the sink, somewhere between 5 and 22 gallons of water used... seems like such a waste.
