Breakfast omelette - Dominique Ludwig Nutrition

  • Recently, my diet has been incredibly topsy-turvy. So as a priority, I made a proper breakfast this morning. I am not good when I am out of my own kitchen and feel the effects almost instantly on my health, gut and energy levels. The power of food! So happy to have a full fridge and the ability to make my own food again
    Anyway, I can highly recommend this high protein omelette and it works well with cottage cheese, but even better with high protein yoghurt! I think I prefer this as it is less watery than cottage cheese. As eggs only contains 6 g of protein each, you can double the protein by adding the yoghurt and Parmesan. I think I got this meal up to 30 g of protein which is exactly where it should be for most women.
    this also helps us balance our blood sugars without the need for silly anti-spike tablets!! More on that later!
    Here’s the recipe.
    Serves one.
    2 eggs
    125-150g Greek/ Skyr/ quark or any other yoghurt with around 10 g of protein per hundred grams
    10g Parmesan cheese, grated
    Sea salt and pepper
    Half a red pepper, thinly sliced
    half a red onion, thinly sliced
    some potato or sweet potato, if you have some.
    1 tablespoon of olive oil
    Method
    1. Starts by gently frying the red pepper and onion in olive oil. Add cooked potato, if using. Fry until soft and removed from the pan onto a plate.
    2. Whisk the eggs with the yoghurt, salt and pepper and pour into a small hot frying pan. There should be enough residual oil, otherwise add a little more.
    3. Grate over the Parmesan cheese and then resist the urge to stir.
    4. Cook on a medium high heat until it is browned on the bottom and soft, but cooked on the top. Add the vegetables, flip the omelette and serve!!
