The banana they sell in majority of the grocery stores in the United States is the Cavendish banana. Most Filipinos are not really fond of this banana, they prefer latundan and lakatan.
Here in the Philippines we like pork or chicken liver, pork heart and kidneys, chicken or pork intestines, chicken or pork blood, pork brain is used as binder for sisig. I know you might be disgusted but once you tried it you might end up liking it because we clean the meat tediously and cook it the Filipino way wc are really flavorful. Filipino food are always an explosion of flavors like you can eat a sweet, sour, spicy, savory dish. a sweet, salty bitter dessert etc
That one which you mentioned about the boodle fight where you place down all the foods offered….those are the cleaned banana leaves and having all the foods laid there and the boodles fight is on
