Baked Rice Pudding with Condensed Milk

  • This old fashioned baked rice pudding recipe uses leftover rice and sweetened condensed milk to make a comforting dessert. We used raisins to keep it traditional, but you can leave them out or used dried cranberries or cherries instead. This is a great way to make a simple dessert your grandma might have served. Plus it uses up any leftover rice you have.

    2 large eggs
    1 cup whole milk
    14 oz. sweetened condensed milk
    1/2 teaspoon cinnamon
    1/8 teaspoon ground nutmeg
    2 cups cooked rice
    1/4 cup raisins, optional

    I've been a chef in the UK for 26 yrs, this was the first recipe my granny taught me to cook when I was 6½. This is on the thick side, your looking for the consistency of thick yogurt, all rice pudding will thicken when cooling just had some warm milk or creamm to loosen it up again

      When I make rice pudding on the stove or in the instant pot, it has a thinner scoopable consistency like that. But when I bake rice pudding I like to be able to serve it in a square. Both ways are delicious! I love that your granny taught you how to cook.

    I've been searching over 30 years for something that was like my Hungarian grandma made... Thick, cut in squares and pour cream on top

    Sweetened condensed milk is such a secret weapon in so many delicious recipes. I absolutely love rice pudding and this looks like a good one!

    This looks delicious. Baked rice pudding is more of a solid, almost like cake, which I love. I first discovered a similar recipe in the original Fannie Farmer cookbook.

    Thanks this is the style/consistency I’ve been searching for 🫶 My Ouma (South African) always added a couple of spreads of apricot jam across the top after cooking & crisped it under grill for a minute or two 🙏

      It's a different texture kind of like baked mac and cheese vs. stovetop, but both are delicious!

      Oh, oh, oh she baked it at too high of a temp and for too long. It's not supposed to have a brown crust and her milk got so hot it curdled, that's gross. If she baked it in a pat of hot water that would help. I like her basic recipe but not her finished product.

    You know what I'd love to try...put the milk that you used into a blender with a banana...then put it in with everything else and continue as you did...I think that'll turn out yummy 😋

      That would be good! I have done banana rice pudding on the stovetop, but I haven't done it in a baked rice pudding yet.

    I love rice pudding, but the baking idea is so great! I think I'd try with the dried cranberries for sure. Excellent recipe!

      It's really good with dried cranberries and a little maple syrup on top when you serve it. It should be baked in a water bath so it doesn't curdle or get a hard crusty brown bottom and edge like hers did.

    Ooh - you didn't tell us of the finished texture - creamy or is the rice a little al dente? It's the creamy rice pudding, I love. Was looking for a baked rice pudding and one with condensed milk, not knowing if there was and yours was right there!
    Whole nutmeg you grate yourself, as shown, is the only way. One whole nutmeg, grated equals one bottle of pre-grated nutmeg. The whole nuts last FOREVER and does not lose flavor. They last so long and taste so much better!

      The rice is cooked before it's added, so it is cooked through. But the final texture of the pudding is thick enough that it can be served in squares when it's cooled, kind of like bread pudding. If you like a creamier final texture, just add a little bit more milk. I agree, whole nutmeg is so much better!

    Just one thing. I think you should still add a tablespoon of vanilla extract, ceylon cinnamon (real cinnamon), and nutmeg, or apple pie spice. Some freshly grated nutmeg on top before cutting is tradition. I press marachino cherries (dried on paper towel) into my pudding so each piece will have one on top. We like it cold. ❤

    “Classic” rice pudding, at least here in the UK, isn’t anywhere near this dense. It’s scooped up with a spoon like cream or yoghurt, not cut into chunks

    That is NOT Rice pudding, not quite sure what that is, but what I can tell you is it definitely NOT creamy or pudding like. You need much more milk added along with eggs to make it a custard like consistency.

      There are so many ways to make and enjoy rice pudding. That is one of the best parts about it. I have several different recipes for rice pudding. Some are creamier and some can be cut and served like you would a piece of bread pudding.

    I like your recipe I bet the sweetened condensed milk adds a nice depth of flavor but holy cow you baked it way too long and in too hot of an oven. It separated and the milk looked curdled. Yuck. Rice pudding should not be brown and crusty. If you like it that way sure go ahead but gees that was solid, it's supposed to be creamy. I bet your grandma would be shocked to see her sliver spoon all tarnished like that. Buy some silver cleaner and get rid of that tarnish.

      Luckily we can all bake according to our own preferences. I love a creamy rice pudding, but I usually make that on the stove or in an instant pot. I have several recipes for those kinds of puddings if you are interested. This recipe is intended to be cut and served much like you would a bread pudding. It's not curdled, the texture you are seeing is the rice. And the brown on top is the cinnamon that floated to the top while baking. My grandma is fine with the spoon the way it is. She comes over and enjoys these treats regularly. She would rather see it used than polished.

      @@CookingWithCarlee Oh yeah, like it's so difficult to shine a silver spoon. Obviously you don't have a clue, eventually the tarnish will eat up all the silver and it will start to rust. Good Grief it only take a few minutes. LOL I don't know what you made but if it's a solid, it's not a pudding. Most people understand that concept, but you can't understand the importance of polishing silver so I guess it's beyond your reasoning.

    That is way too much rice and honestly, it looks terrible. Leftover rice is a bad idea for making rice pudding. The pudding can be baked or boiled, but the rice needs to go in raw. There should be no eggs, unless you know how to temper them. Otherwise, the stuff will smell terrible and taste like slop.

      One of the beautiful things about rice pudding is there are so many different ways to make it. I have a stovetop recipe and an instant pot recipe that start with raw rice. However, for baked rice pudding I prefer to start with already cooked rice. I am sorry this isn't the recipe for you, I hope you find one that you like better.

      @@CookingWithCarlee I tried a recipe with cooked rice, milk, and eggs and it was terrible. Admittedly it was not this exact recipe, but it was similar. The way I like to do it is in the oven with raw rice. (Do not use the Carolina brand). The ratio is 4 cups of milk, 1/3 cup regular white rice (raw), 1/2 cup of sugar, 1/4 teasp. of cinnamon and/ or nutmeg, 1 teasp. Vanilla. Bake in a buttered casserole dish at 300F for 2 to 3 hours until rice is done and most of the milk is absorbed. Stir every 20-30 minutes.
