    There are so many cooking videos on youtube, not to mention cable and streaming services. But few are as entertaining as Cooking with Shotgun Red thanks to Steve Hall and Miss Sheila. Steve was so down to earth and his recipes are fantastic and you were a great producer. I hope you are doing well and thriving. Every dish I have cooked based on his recipes has met with great approval from my family and friends. And some of them are not easily impressed.

    Made this for dinner tonight. Great recipe. Instead of potatoes I put fresh pineapple and I added a splash of cooking sherry, and rice wine vinegar. Kinda gave it an oriental flare. Then after it was done i thickened the sauce w/ a cornstarch slurry and served it with rice.

    What I would have done( I do not like chicken bones ) is put the thawed chicken into the slow cooker the night before with just enough water to cover the bottom of the slow cooker, and let the chicken cook all night. At dawn, I would put the cooked chicken into a plastic bowl with a lid, and place the chicken stock into another bowl covered with a lid. I would then let both cool on the counter for a while before placing them both into the refrigerator to further cool. Prep everything else that is going into the slow cooker, and then remove all the chicken meat from the bones. Then, I would cut the chicken meat into smaller pieces. Just before I place the chicken stock into the slow cooker, I would remove any chicken grease that is floating on the top. Then place all the ingredients into the slow cooker along with the sauce and chicken stock, and then let it cook for as long as you need. Because the chicken is already cooked, preheat the slow cooker on high, and then set to low as needed. The veggies are really the only thing that needs to cook right now. Cook some rice, and ( what I do ) mix the cooked and strained rice into a large bowl along with the cooked ingredients from the slow cooker. Put some into a bowl for your meal; cover the bowl; and then place the rest into the refrigerator for leftovers. If you want to freeze some for later in the month, then do so after the meal has thoroughly cooled. By letting the meal cool overnight, it will taste better for lunch/supper the day after you first cooked it. It's all good when the flavor of all the ingredients mixes together overnight. My grandfather's gumbo tasted better the day after he cooked it when doing this. Always remember, a recipe is just a thought written on paper. A good cook always takes that recipe, and improves upon it by experimenting with different flavors, ingredients, and cooking times. Good experimenting, and good eating.

    Now I know why my cooking dried out and burned! I live at high altitude, where water boils not at the usual 212 Farenheit but at a lower 196 Fahrenheit. So alll the water evaporated and left the dutch oven because it is designed with 3 very little bumps on the pot border, which keep the lid a tiny fraction of an inch above the edge of the pot, the All Clad cast iron cooker, from Williams Sonoma. Bogotá, Colombia, S.America, 8300 ft high. That being so, I should only use slow cook -low setting, not high as your recipe calls for. Thanks!

    • @sandilobianco6734
      @sandilobianco6734 2 года назад

      Carlos sorry to hear that it burned. I learned to use a vegetable spray like Pam inside the crock pot. Also I put some cut up veggies like celery and carrots cabbage at the bottom of pot then put the meat on top of them. The vegetables add some needed liquid as well. You have to play around with the ratios as you see in Steve’s video.
