I spent weeks with some of the greatest Pizza Chefs and I have learned so much especially about Neapolitan Pizza. Now that I have more knowledge I love making pizzas at least once a week. I have 2 wood fired ovens (a big one and a small one) but not everyone does. So how do you cook Pizza at home if you don't have a wood fired oven? The max temperature my home oven can reach is 250°C - 482°F which is not enough for a Neapolitan Pizza. So is it possible? Check out this video because I might be able to do it

Pre-baking the dough and then adding the toppings! That's the answer, I never pre-baked the dough. It was always too soft or it was okay, but the toppings were burnt. How on earth could I've been so stupid.

Well keep in mind that total bake time will be over 7 minutes. This will dry the crust. I mean totally dry. Au unless you are going with 70+ hydration, this will not be crunchy on the outside and soft on the inside. When I cook at home I always try to cook everything under 3-4 minutes tops

Yes. I had to pull it from the oven, because the toppings were burning, too.
Then i tried to bake the bottom for a few minutes first.
But then the bottom was burned, before the cheese and toppings were done.
Then i put the tomatoes and cheese for the first few minutes and then the toppings for the second time.

It was one of my first jobs working under the table. 2006 I was making pizza for my hole town by myself. We had a older lady get the dough ready and i just put toppings on and baked it. I went on to go to culinary school and becoming a cook in the army. In the army my cooking crew was in charge of the new cooking standards in the military. We no longer just boiled water and our boss always told us to consider ourselves as chefs. Well we had different stuff like custom brigade burgers, smoothie bar, waffles, sushi, german food, Korean, and pizza.
I loved making the dough from scratch because the premade stuff just wasnt no good. I started working on a pesto dough but could never get it to the right consistency. It was always tougher then normal dough. I tried changing the ingredients to account for the pesto but no matter what I did it just wasnt fluffy enough but it sure tasted good. Please master pizza maker can you show us how to flavor our doughs. Please please I'm begging.

My oven goes to 290° thats pretty hot for a built in oven. However i figured that it doesn't make too much a difference. I preheat to the maximum and put the pizza in when it reaches about 240° on the lowest groove on a COLD baking tray and then set to only heat from below- 12 minutes is perfect. Add a little bit of semolina to home baked pizza!

My friend you can do a pizza dough with long fermentation for that you need only to put 5 gr of yeast for each 500 gr of flour but needed to let the dough at min 24h in the fridge that allow the yeast to transform gluten more deeply.
If you have gluten intolerance you need to ban all industrial products, not enough raised

Vincenzo, I love your content and appreciate your skills, dont get me wrong. But isnt that Pizza a bit dry? Guess a part of the passata evaporated / soaked in the dough while prebaking. I would put a bit more passata after the prebaking 😋

Watch the heat rating on parchment paper!!! It's on the side of the box. Mine does 420°F. I cook the pizza for about 10 minutes, remove from oven, cool, slice, then cook in a very hot oven until the cheese bubbles. Can't get more New York than throwing a slice of pie into a hot oven to reheat!!
