  • Crawfish are like baby lobsters; they look like, move like it, and even taste like it, so when Master Sushi Chef Hiroyuki Terada saw these being sold in a local marketplace, he wanted to make something really interesting and artful since these little critters are so small in size.
    The time it took to create this dish was staggering but if you want to save some time, use shrimp and make it from that. You'll get a similar taste and texture. Let us know if you tried this at home!

    About Master Sushi Chef Hiroyuki Terada:
    Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on RUclips.
    At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

    You two have inspired me to pursue this art of Sushi and Japanese Cuisine in general. I'm looking into a 2 month course that will cover, well... you know.. Sushi. And it will also cover Washoku. Truly amazing. I'm 19, grew up around cooking and preparing meals, dad owns restaurants here in Texas. Its just time to see what I want to do, and I think this is it.     I love watching Hiro's videos. You are able to learn and he is so chill with the way he teaches. He may not be as renowned as someone like Gordon Ramsay but in my opinion he is 10x the chef as that pig of a man.

    I have never seen or heard of anyone dispatching crawdads like that. Everywhere in the whole of the US, they are thrown into a boiling pot or frying pan alive. Master Chef Hero is very kind and compassionate. I am going to try this sushi. It looks sooooooo good!!!

    Yes, here in Louisiana we boil them up with corn, potatoes, onions, sausage, mushrooms, lemons and anything else you want to toss in the boil pot. Honestly, the corn and potatoes are my favorite part. So yummy!

    I had to laugh a bit at the individual dispatching of the crawfish. We usually drop them into the kettle 30lbs. at a time. I know what Hiro does behind the scenes. I fully appreciate selling a customer whatever they want to buy, but the gold on the plate seems like such a gimmick. I love both of you guys video. Looking forward to the next one.

      1- really, DJ Rodriguez? Pfftt ya brought politics into a cooking comments section? That's... hilarious. (but this is also youtube, so, I suppose well done? Well done. 3 points) 2- I'm with Cajun here. I'm watching Hiro dispatch each individual crawfish... then peeling each tail instead of pinching, AND THEN cut each tail in half, and I'm thinking " I give up half way peeling left over boil for etoufee" The first video I watched was for blue crabs, because it's blue crab season here, and I was kinda excited about trying something new with them! Lol, bought the frozen ones instead and threw them into the gumbo pot. I kinda do things on the cheap :/

    Kind of gross how he put the rice directly into the wooden sushi mold without plastic wrap.
    You can see the carpenters glue in the corners and it was soaking in water... lol

      I’m going to be honest with you. It’s an acquired taste. You start with imitation crab and work your way up to the strangest stuff. Don’t rush it. Start with cooked and work your way towards raw sushi. Try shrimp tempura and Cali rolls first and go from there.

      blave549 Believe it or not it helps for those of us who haven't tried to prep crayfish before. I want to kill them as quickly and efficiently as possible, to avoid suffering if possible. It really helps to see exactly where the knife enters and cuts through the head.
