      I wish they weren't all deep fried, the best part of gyoza is the contrast in texture when doing the frying/steaming technique

      good frozen dumplings aren't *that* much worse than homemade, and an order of magnitude cheaper

    The biggest surprise to me on this journey so far is learning there’s only 80 something teriyaki restaurants in Seattle.

    My favorite teriyaki place was right across the street from Mikou. It was named I Love Teriyaki but a different owner than the one in Fremont. Unfortunately the place had a fire a while back and they never rebuilt.

      That's a chain, but also is consistently really good Teriyaki no matter the location you go to.

      I miss I Luv Teriyaki Georgetown. I used to work in the area and would go for lunch all the time. Mikou was where I went when the ILT parking lot was full. :)

      I religiously went to that location before it had burned down, I found out about Mikou after getting a craving for teriyaki and now it’s my place lol

    will have to check this place out! i love eating in georgetown - so many good places to check out there. also recommend the japanese grocery store maruta shoten, they got an amazing deli
    also, if anyone is interested in the museum of flight, they do free admission from 5pm-9pm on the first thursday of the month!

    I fell in love with Seattle teriyaki after living there for a couple summers 15+ years ago, and have never met anyone who even acknowledged that Seattle teriyaki was a thing. Ar long last, I feel seen. And hungry. Thanks, Kenji! The best copycat recipe I've seen uses lettuce in the sauce recipe. I make it by the pitcher and it takes me right back.

    I grew up in Portland, lived in Seattle for 11 years, lived in Portland another 10+ years and now live in California. I miss true PNW teriyaki!!!

    Thank you for putting together the Google MyMap. I am visiting Seattle in August as the last stop on the West coast and I am 110% going to hit Matt's for a hot dog and try one of your stand out teriyaki spots.

      As a lifelong local: I honestly have not heard a single friend or family member say that they LOVE Matt’s or think it’s super beloved in terms of Seattle. If you love hot dogs, sure, but if you’re looking for a proper Seattle dog I would just find a stand on cap hill at midnight. I wouldn’t go out of your for it, personally!

    I work down the street and Mikou Teriyaki is my go to Teriyaki. It is on the sweet side which is what I prefer, the sauce and dressing is the best.

    Despite the fact ive eaten at over 100 teriyaki restaurants, this is the first one in your series I've been to.
    This was probably my favorite one i went to in Georgetown.
    I love the crispy garlic chicken at Khao San Thai near the woodworking store, it was my favorite thing in Georgetown.

    41 grams of sugar! oh I miss my rainy Seattle commute, not lying at all. Rain has a relaxing feeling, I wish I had better skills in poetry to elaborate but for me, I do have a connection with Seattle weather.

      Just before reading your comment, I found this recipe on Reddit from a Seattle native:
      1 part sugar
      2 parts rice wine vinegar
      2 parts mayo
      a lot of places will add poppy seeds.

    I went yesterday to this place. I visited the museum first and had a flight to check in to an hour later so needed a dinner and had time to kill, I t was a big plate, couldn't finish it all, and it came out real quick too. I enjoyed the meal, wish I remembered to get the combo with the gyoza, but oh well.

    If you ever get to Durham NC, and crave dumplings and a Chinese burger, you have to hit Sister Liu's Kitchen. Their dumplings and sauce is so good, and their spicy burgers. I could hang out there for a week and the craving would still be there.
    Everytime you open the combo box, I get hungry.

    A random hill I’ll die on is that Seattle teriyaki must be eaten with a plastic fork (chopsticks acceptable). I don’t know what it is but it never hits the same with metal utensils.

    After following this series I wonder how many varieties of frozen dumplings there are. Does each owner choose from 20 options based on personal preference and price point or are restaurants limited to a few options based on who they use as a frozen food vendor.
    My second question is how is the teriyaki cooked? Charcoal grill, gas grill, flat top?

      I'm not sure, but judging by the logo on the side and some quick investigating I think they are Ray-ban Meta Wayfarer glasses. I could definitely be wrong though, Kenji would have to confirm.

      I think one of the first videos of this series had his explanation. I think it has to do with how edges are crimped together but I don't remember the details

      He had mentioned frozen dumplings usually have some parallel marks on one side from the rack that they are placed on for freezing, but I haven't actually been able to see those marks in all of the videos

      Is there one in Seattle?
      I haven’t had it in years (I like in Beaverton now) but that was my teriyaki place growing up and in my head it is the best one ever.
      Glad to know I’m not the only one that thinks this.
