I’m a local and Toshio’s has been my spot for years - because of Kenji I tried Rainier down the street and honestly it’s a stalemate. I like the skin on chicken and dressing at Toshios but think rainier is more classic teriyaki. It depends on my mood

The best part about teriyaki is it's not too hard to make at home! Although without trying a good quality one from a restaurant it may be hard to know how accurate what you made was
Hah, be careful what you wish for. I live in Seattle and my teriyaki consumption has spiked because of this series.

I wouldn't call this area Beacon Hill, more like Rainier Valley or Judkins Park
Toshio’s is definitely the best and the only one I’m willing to travel for outside of Redmond. Skin on or bust!

Kenji- the folks asking if you want sauce on your rice is a super old school move for a teriyaki joint. When people couldn’t imagine eating plain rice. At one time I was like that too. Even now I like it when just a bit of sauce has graced my rice like donburi, but that’s not pouring it on. Agree mushy rice is always bad. A lot of times I’ll order just chicken she salad and have my pot waiting at home these days. Also all you non- Seattle people CHICKEN. Is standard when people say teriyaki here, even though there is often beef, sometimes pork and tofu .

Team No Ice thinks they are being cheated. And in places where there is no free refills that make more sense. However ice keeps the drink colder and slows down the drink losing it's carbonation. Properly carbonated drinks served cold taste better. I have made German friends try soda with ice and 90% agree and start taking ice all the time.
I was a loyal customer of toshios for 22 years before moving out of Seattle. I can still taste it!
We are visiting Seattle next week with the kids for spring break and can't wait to try some of these teriyaki places. Love watching these videos.
Definitely go to Teriyaki Madness. Quite a few of these I haven't been to because when you find the one you like, you usually keep going back. Enjoy your trip

Question: There is some variation on what constitutes a traditional Teriyaki place. Aloha Plates, in the Uwajamaya food court for example is really more of a Hawaiian place. They certainly do have Teriyaki Chicken and Gyoza though. You get Macaroni salad instead of green salad though. Are places like that on the list too?
Weird fountain drink hack, sprite with a splash of coke tastes like ginger ale. Put in just enough coke for it to look like ginger ale and it tastes like it. Works with diet too.
I agree on steamed rice. I like to have a bowl of rice next to me when I eat ramen for the same reason.

Same here. I add a splash of Dr. Pepper to my Diet Coke or Coke Zero and lots of ice only if there's free refills. That's the Chinese in me and that's how we roll...😄
I would say Toshio's is more in Mt. Baker than Beacon Hill :)

When I lived in the ID, Toshio's was the spot I'd go to. Really delicious, and super affordable compared to lots of other options around.
Your analysis is so good; you somehow put into words what I've liked best about how to drink soft drinks!
I lived in Ballard for years and the Teriyaki spot down there is Sunny Teriyaki right at Market & Leary. I was there pretty reliably as I lived right around the corner and it was perfect for those days I didn't want to cook.
🐮 Yoshinoya uses skin-on thighs. Also, non marinated. Basically fresh thigh, griddle/pan-fry until browned, sliced, then slathered.
I dig it a lot, esp. since the classic “Combo” includes gyudon & steam veg.
US/SoCal Yoshinoya chains far from the best teriyaki or gyudon (it’s 100x better quality/taste in Japan) ; but, it’s what I grew up w, and has a distinct, memorable, decently delicious taste.
Also, easier to cook this style at home since no marination… just fry (or bake) until crisp, slice and sauce.
Marination tends to make chx super stringy, dry and tough (salts expel juices too much, and also cures it)… “ham like” as u say.
Fresh, non marinated thighs taste so much fresher and better for teriyaki, imo. 🐓
I really want my teriyaki to have the crispy skin but still soft in the meaty bits. Yoshinoya in not US delivers on that... Yoshinoya in the US is a disappointment...
I know you're only sampling the plain chicken and gyoza, but when you get to Sunny Teriyaki near Fisherman's Terminal, please get some of their spicy sauce on the side, just to try. I'd really love to know their recipe.

i notice that the place had a food safety rating of "okay" posted on the door - i looked it up on the king county website and their main violation seems to be not keeping things hot enough. is that something that you have any thoughts on as a pro chef?
in my home country food ratings are basically a joke that everyone bribes their way through, so i've eaten a lot worse without getting sick and I don't really care much personally. just wondering about your thoughts as a culinary professional

I remember growing up on Nasai Teriyaki in Kirkland and sauce on the rice was THE THING to do, and how grossed out Japanese friends were of the idea. It’s canon for Seattle teriyaki.

I was SO bummed when Ichi-Ban's in the ID closed about 10 years ago. They were the absolute best, and just a tiny little dive with the greatest atmosphere. I haven't had anything in Seattle that comes close to that.
I think that area would be considered Rainier valley, but it is somewhat close to Beacon Hill area.

I’m not a big fan of teriyaki flavor but the food there is legit. The sauce on rice is just the salad dressing on rice.
When i want to make a quick teriyaki and not use the grill, i do it braised and it looks a lot like what's here.
For fountain soda (or any soda really), i pour over ice. Besides the temperature, i feel like it's more refreshing because it gives the CO2 somewhere to form bubbles, and when you drink these bubbles, they're bigger as opposed to drinking it straight up from the bottle where it's almost foamier, if that makes sense.
About 1:38 - as someone of Indian origin, the thought of eating just plain rice is absurd to me - that's kind of eating a plain slice of bread with nothing on it - or plain pasta with no sauce. I can never eat any rice unless it's mixed with something else - so the way I eat teriyaki is cut the chicken into smaller bites, pour the sauce over the rice, and mix the chicken bites, sauce, and rice together all into one - then eat that with a spoon like a rice dish
To be fair tho, if it's a really good bread I would happily eat a plain slice of bread with nothing on it
Same. I grew up in Malaysia for most of my early childhood and the way my family eats our rice is to eat the rice with something savory at the same time. So for chicken teriyaki grab a piece of chicken, a scoop of rice, and maybe some undressed salad and eat it all in one spoonful of goodness. Or say take a bite of the gyoza then stuff some rice in your mouth to balance the flavors.
Are you uploading these as you make them? If so, dont you get sick of Teriyaki so often?
He said he doesn't really eat all of them. He's just tasting and I'm assuming his family eats the rest or he uses the leftovers for something else. He mentioned using the rice from these for fried rice for example.

I know that diluted cold soda taste. I would get 32 oz sodas in a milk carton like container during college delivered with my pizza and by the time it got to me it was just right.

Dang... To see Toshio's and not see Oh boy oberto across the street makes me sad.
Toshio's was my intro to Seattle teriyaki over 20 years ago. Maybe it was better back then or maybe we just knew less. Since they remodeled the quality has gone down a bit.
This place sounds good, the fact that they leave the skin on what look like chicken thighs probably adds to the juiciness,especially if it's pre cooked and warmed on the grill. I agree with you on the rice not having any sauce since you eating with chopsticks, the sauce would just break down the rice into bits. Rice is like the mash potatoes for teriyaki. On the drink front what say you to a green river soda I'm sure some serve that?

Thanks for covering my local! Definitely our fav being that it’s stumbling distance away and also they are always so nice. I don’t actually eat meat all that often but their chicken is so good.
Re the is this beacon hill issue, the city’s designated neighborhood names are absurd. there’s not really a good name for many of the places right on or a few blocks from rainier ave unless it’s unambiguously part of one of the well known names (eg columbia city or rainier beach). toshio’s in particular is essentially at the intersection where north beacon hill and judkins park “meet” (mt. baker I would say is further to the south by small bit.)

The best teriyaki was at Toshi's Teriyaki a block away from Greenlake, but that was back in the early to mid 80's before the explosion of teriyaki restaurants. They served full hind quarter pieces (thigh and drum), two scoops of rice and salad. All for $4.50. The chicken was marinated and grilled/roasted and doggone good. Then came the explosion of teriyaki joints, and those places discovered it was easier and cheaper to just grill a plain piece of chicken - thigh or breast (mostly breast), then slather teriyaki sauce on top and call it teriyaki chicken. This is why I stopped eating teriyaki. It became just cooked chicken with sauce on top. At least from these videos, some of those joints the chicken appears to be marinated. One of your videos, it looked like precooked chicken that was mixed in a bowl of sauce, then reheated, then plated.
I wish you would do some reviews on the eastside… Bellevue, Issaquah, Redmond, Kirkland.

We need a kenji recipe for both breast and thigh, i love the negima recipe, but it doesnt work great indoors for me. Id love a simple, easy to cook, delicious chicken recipe i can either meal prep or quickly throw together on a weekend.

Does your plain rice preference apply to mapo tofu as well? I’m eating mapo tofu right now (hybrid of your two recipes in the Wok) and my favourite thing since I was a kid was mixing the rice and mapo together

Judging by the video, this teriyaki is a big FAIL. Rice, no good. Sauce, no good. Chicken's not grilled? That's weird. Dumplings are frozen ones you can buy from the grocery store. Well, if you know, you know.
Asking if you'd like the rice to have sauce is kind of like asking if the bread slices of a sandwich should be dunked in sauce.
Or maybe it's just personal preferences.

Sushi rice doesn't have sauce, but it does have flavor from the vinegar and konbu. Also, the Japanese invented Omurice which is literally egg and ketchup on top of rice, and they also invented Tamago Kake Gohan which is a raw egg mixed into rice which leaves it with a slimy texture.
Well usually sandwich bread does have a spread or condiment on it, lol
