Without a second guitarist, there are no double guitar solos: Two different sounding guitars that at first play alternately but harmonize together towards the end. "No bullets fly" by Sabaton and "Akatzuki" by Babymetal come to mind. John Mayer's 2010 live performance of "Slow dancing in a burning room" at the LA Forum does not have a real double guitar solo, but the way he and rhythm guitarist Rory MacIntlosh (?) interact is downright amazing. So yes, two guitars.
I can think of at least two successful rock bands that were trios - Rush and ZZ top. I am also aware of an excellent up and coming rock band that is a trio - The Warning. So it is not necessarily needed to have multiple guitars!
