Both characters have experiences that make them mature faster than the other characters. I think the zutara would have worked because there is an equivalence between them. Both are treated as equal. Also did you notice that both Katara and Zuko found it difficult to master their bending? all the other characters toph, aang and azula are "prodigies".
No. Katara just had no idea how to learn by herself. When she had a waterbending scroll it became easier for her. Besides she learned how to absorb water from her surroundings and bloodbend at first try. As for Zuko. He couldn't learn his bending as fast as Azula because of his toxic father Ozai. Toxic parents tend to choose roles for their kids. Azula was his golden child and Zuko was the black sheep. If I were Zuko it would also be difficult for me to learn my bending.
The more I watch Avatar and think about Zuko and Katara within the main group, the more I realize that Zuko functions as the Team Dad and Katara functions as the Team Mom, thus being the parents of the main Gaang. They are also the most mature and multifaceted members of the main group and their worldview is just as complex. Therefore, they do deserve each other in the long run. If they can pull off being parental figures to their comrades/family, as they would easily protect them from all sort of harm, they could certainly pull off being great parents to their children, which is also something that Iroh would be proud of in terms of seeing his darling grandchildren grow.

I think that Katara and Zuko marrying makes a lot more sense after the North & South comics. She essentially gains the same status Yue held because her father is made Head Chieftan of the Southern Water Tribe. They discuss trade agreements and expansion due to the natural resources and deposits that can be found there. The alone made the SWT a viable ally, and I think it would actually be more preferable than the NWT for the simple fact that there was a very recent attack on the them, whereas hardly anyone alive remembers full on attacks (not raids) in the SWT. Most likely they would be like Aang and Katara and continue having children until they had a firebending one. That would set up some interesting conflicts and family dynamics if say, the middle or youngest child ends up being the firebender and the one groomed for the throne.
I think their middle or youngest would be the fire bender but can you imagine he or her taking after their mother katara looks while being a fire bender like their dad zuko

He fights internally between his love for Katara and the duty to, lets say, repopulate the air nomads. He has some long and deep conversations with the elder members of the acolytes about his struggles, and there again comes the theme of giving up his spiritual needs for the world. Aang is explained that he cant do the two things simultaneously, because his duties of the Avatar would basically make him the absent and neglectful father he would never want to be. The elders convince him that the entire community would take care of his children and teach them the ways of the Air Nomads, and he could visit them whenever he wanted, while still taking care of his duty as the avatar.
What if aang and ty lee had kids? A series depicting how zutara and ty laangs kids changed how the fire nation thinks and how the other nations view them would be sick.

I think that they wouldn't put the pressure of that on their kids. I think they would have kids, but not in an "we need a firebending child" way.
