  • Singaporeans love seafood, especially crabs. Apart from our famous Chilli Crab, Black Pepper Crab 黑胡椒螃蟹 is another favourite style that Singaporeans love. If you've never tried before, you might want to head up to Eng Seng at Joo Chiat. I haven't tried them for a while now but the last time I ate there, their black pepper crabs were one of the best I've tried in Singapore. Just google Eng Seng for more information. Stay too far from Eng Seng? Then try Roland's recipe and let us know what you think. It's finger licking good! Yum yum?

    Ingredients:
    Serves 6 pax
    4 tablespoons of coarsely grounded black pepper
    70g of butter
    Some cooking oil
    1 whole red onion - thinly sliced
    5 cloves of chopped garlic
    One handful of curry leaves
    2 cups of water
    2 tablespoons of oyster sauce
    1.3 kg of crabs
    1 teaspoon of sugar
    2 tablespoons of dark soy sauce
    Some cornstarch solution

    I lived in Singapore for 7 years when I was a child, now that I'm pregnant I'm constantly thinking about black pepper crabs from Eng Seng. So glad to have found a recipe here, definitely trying it soon!

    I watched this video today and got so inspired that I had to make this dish for dinner. I live in Canada so unfortunately I don't have access to the best ingredients. I found a 500g box of frozen blue crabs in my basement freezer and decided to give this recipe a try. I just wanted to let you know that you are a genius!     Hi chef. How did you prepare the crabs before putting them in the gravy? I see that they are not yet cooked because of the color. How did you separate them into pieces without cooking them first? Thank you so much.

      Dispatch them humanely (I hold the crab on its' back and use a cleaver down the centreline), then clean (remove top shell, remove guts & gills), separate the pieces how you like, then cook.

      Chop a few very spicy chilli (e.g. from Thailand or Vietnam) and mix it inside when u stir fry the onions. That should make it spicy. Black pepper would give it a very "spiced" flavor but you will have to add in spicy chilli to get it spicy.

      They are not the same. The curry leaves are a bergamot taste, whereas curry powder is a mix of different Asian ground spices. On the other hand, curry crab is also delicious. I would maybe touch it up with some extra coconut milk.

      Hi Sherwin. If you can’t get hold of curry leaves then you can omit them but if you can get them, use them in this recipe because they will make the chicken extra fragrant. Happy cooking!

      curry leaves and curry powder r completely different things. The leave is a herb that is usually put into curry for flavor. that is why the name. Hope this help

    I’m not able to get fresh curry leaves where I live, but I have dried. Would dried be good in this dish or would it be better to skip the curry leaves entirely?
