  • Ingredients: 30 macarons
    96 grams almond flour
    75 grams powdered sugar
    14 grams cocoa powder
    100 grams egg whites
    pinch of salt
    100 grams sugar
    Chocolate Ganache:
    210 grams heavy cream
    15 grams corn syrup
    210 grams dark chocolate
    40 grams unsalted butter
    pinch of salt
    5 grams mint extract (optional)

    Can we make the meringue straight into the mixer cold and slowly add the sugar without heating them? Is this a better technique?

      @@macaronrecipes8676 I did like you did too Ben Marie But I don't know why the meringue never puffed up when I hit the mixer. And tell me something more. In the oven when we put them to cook. Should we have it in the air or in the resistors?

      @@tasossunsun9528 How many minutes did you beat the meringue? I bake macarons in a conventional oven for 13-15 minutes at 325F degrees.

      @@macaronrecipes8676 I beat her until she clouds and is very firm. And I bake them in an air compatible oven for 13 minutes, I also tried it for 15 minutes. Both at 130°c and 145°c

    May I know approximately how many egg whites is a 100g? Also, when you say it makes 30 macarons do you mean 30 individual shells?

      About 3 extra large eggs. 60 individual shells = 30 macarons.

      Thanks! Will try it soon. I have tried making other macaron recipes before and all attempts didn't have any "pied" at all but this recipe looks good!

    How long do you whisk the sugar until it melts. I did it for 5 min and did not get high glissy peaks :/

      Mix until the sugar has melted, this should take no more than 5 minutes. Then you should mix with a mixer for 7 to 15 minutes, depending on which mixer and powder you have.
