My mother had a friend to call and ask her how to pickle okra. She's been known for canning but its been a long time - she has forgotten exactly how to can okra. Well, well. Look who I ran across to share the recipe. My mother can now relive her pickled okra and canning experience and share with her friend. Thanks Old Man Cooking for sharing.

An easy way to sterilize jars is to wash and rinse well then put in a preheated oven at 220 degrees for 20 minutes. That’s all it takes to sterilize plus hold them at temp without taking more stove top space.
Thanks for the recipe!! I’ll try it

Is it not to much salt? Seems like a lot. But I do like salt. I tried this before, but I think I over boiled it while outside and evaporated a lot. The okra shrank from the heavy salt.

Thanks Old Man. I just got into canning this summer and I will try a batch of your Okra Pickles. Just a thought on getting the most use of the space in the jar as you load the Okra: I think you could get more in the jar by alternating the Okra bottom up to top up.

I've never really ever eaten Okra, but bought a jar of Tobasco Pickled Okra recently and scoffed the lot in three days (and I was holding back!). We don't see much of it in Australia, but I now have seeds and some that I bought at the Fruit and Veg shop to get me by. Pickled Okra is going to be a regular item on my table from now on. I need to dig the preserving unit out from under the house. I haven't used it since the late wife passed in 2007. Thanks for the recipe, I'll be using red chillies, they look better in the jar, haha!

Oh my goodness! You did hit the jackpot! These are delicious and very, very close to the "Talk O' Texas" brand which we love. I did 3 pints with dill seed and 3 with dill weed (ran out of seed and later found I could have substituted Caraway seed for dill seed which I had a full fresh bottle). For sure the first jar with seed is DELICIOUS!

If you load 1/2 the pods upside down and then the rest, load them right side up. You;ll get more in every jar. Add brine but do not use butter knife to debubble. It makes micro scratches and increases the chance of breakage.

Love your southern style of communicating! I'm a raised Mississippian living in Argentina, and I just found okra after being deprived for some years! (You can imagine the joy!) I wanted to ask you, I cannot find mason or ball jars here or something similar with an airtight seal. They are old school here, using a big canning machine for which I have no space or money for. Can I re-use jars with lids that are screw-on and not airtight? Maybe it would only last a few months in my fridge? I figure since it is pickling with vinegar that I could keep it in the fridge for some months. What's your opinion?

    • @OldManCookin
      @OldManCookin  8 лет назад +1

+Amy S I truly don't know the answer for sure.... But I do know you would not be able to water bath them to make them safe...
Can you order from Amazon in Argentina? You could use a Fido jar and lacto ferment your okra... real good for you too...
I haven't lacto fermented any okra yet but come summer I will be.... check it out on Fermenters Kitchen on Facebook... you can get just about any question about fermentation there and you can keep it in fridge after fermenting... to do this you will need jars too but Fido jars work great for that... maybe you can find them there.... :)

i want to pickle some organic okras which i've been harvesting of late. i want to try your method but as i see, you got some nice 2 lid jars which i am not able to get where i live. just wanted to know whether single lid jars will give the same results or will it cause any problems? thanx and have a great day!!

I tried the recipe they have a great spicy taste but seem a little strong on the vinegar side .. Is the recipes of 2 quarts of vinegar and only 2 cups of water correct or did I misunderstand something?

    • @OldManCookin

I have tried this as is. I have to do five cups of vinegar and five cups of water (math checks out ;-)) . I get heartburn real easy and the ratio was killing me :)

This was my first time pickling okra, and I only had enough for two pints. I had to adjust the recipe for the brine of course. Why would the okra, the garlic cloves and some of the peppercorns I added be floating?

I've been growing okara for the last two years but this year they are monsters! My biggest one is bigger than a banana. I was going to use a used large pickel jar. Would that be okay? Any suggestions?

When I pickle the fluid level goes down below the okra. Will the parts on top sticking out go bad?

Do I bring it to boil first, then count ten minutes or do I count ten minutes as soon as the jars are placed in the water bath?

Yes, timing starts after water begins to boil.
