    This is a great video. Most of us know nothing about food science. We believe what we hear from chefs and cooking celebrities. Learning the truth about the impact of food preparation is like an antidote to the food-porn misinformation. I would like to see more of these. Thank you. Incidentally, I have started using your NACPRO.

    I've pretty much converted to herbivorism. One big flaw in my diet is the consumption of small amounts of jelly beans and corn chips in the evening. That's how I reward myself after putting in an honest day's work.

    I think they meant "helping with pregnancy" and "cancer prevention". Anyway, I'd list plain old cabbage as well as sprouted nuts and also sprouts of cruciferous veg, like broccoli microgreens. Lots of nutrients in those squiggly little baby plants. They did not mention that in the world of leafy greens, some people get issues with oxalates, particularly spinach if they consume too much. Bok Choy is a good option.

    Thank you for this! There are so many top ten lists that people really base their grocery list on hoping for positive health outcomes. Nutrition is so much more complex than a list. There are socioeconomic, psychological, cultural preferences and physical activity aspects that play an equally important role in optimal health. However, it helps to have a licensed professional break down lists such as this and offer healthy plant-based alternatives.
    P.S. I wish I liked beets 🥴 6:05 😂

    Fun video to watch!! I wish I had paid more attention in my food science classes, but glad to have you explain! What do you think about roasted garlic---I take a whole head, cut off the top, pour a little olive oil on it and wrap in foil.Bake for a bit, squeeze, and it's like eating garlic butter...

    The vitamin C in the bell peppers is reduced greatly in cooking - but the beta carotene is more absorbable when cooked. So - eat them both ways. Just skip the beef and cheese.

    I saw a study on oats and they didn't find a big difference between how different oats affect you except instant with sugar and flavors.

    Dr Liu, I absolutely love your videos, you present the info as if I were hearing it from a friend or family helping me.
    I hope someday you could do a video on your daily meals and supplements to make it easier to know how to pair foods to optimize benefits as that seems to be the challenge. Food is medicine we can enjoy and benefit but it truly is a science to know how to execute in order for it to be effective. Thank you again for being a wonderful source of info.

    Several medical professionals including nutritionist, have told me that I need to eat more protein in meat form. The only thing that I'll eat is canned tuna and chicken breast. And I have to force myself to eat those things. (I have diabetes 2, and extreme fatty liver)

    I have always been curious about why sulforaphane is not created when the broccoli is initially harvested or cut? Do the additional cuts add something to the process? Is it the more cuts the better? Inquiring minds want to know.

    Thanks for the lesson. I have R.A. and I’m trying to learn to eat raw all the time. It’s a challenge. No meat, dairy, grains. Happily I love to eat quinoa. I hate kale. 😂 I’ve added chia seeds, nuts.

    26:07-08. You say Vitamin A (in sweet potatoes), but the English captions read Vitamin C! And around 27:00, the captions replace A with both Vitamins E and K! (Sweet potatoes/yams🍠 are vitamin A powerhouses, as you say.) Speaking of Vitamin A, I’ve read for decades that dietary A is much better than Vitamin A supplements, which can result in overdosing. So in looking for eye health vitamins on Amazon, I found Clear Nutraceuticals Multimacular Formula (Bilberry, Lutein, Zeaxanthin, Lycopene, etc, plus…10,000 IU Vitamin A (Retinyl Palmitate) (330%).😳 Excess? Is it dangerous? What do you think? I love carrots & sweet potatoes, so eat them a lot. But both my parents have had macular degeneration. Thanks🌺

    I too think of our oceans as giant toilets, only worse. Organic matter is fine, as it will degrade naturally and likely provide some benefit. It's all the plastics and chemicals that don't degrade that become part of our food chain. I would never eat "farmed" fish, and I'm no longer eating industrialized chicken, pork, or beef. I do eat eggs and wild caught small fish, but mostly just plants. Lots 'o nuts. Maybe too many. I probably eat about a full cup of nuts in the course of a day and that includes peanuts, walnuts, pistachios, almonds, and or cashews.

      @@MsCjmaxi Are you Dr. Liu? I’m asking the Doctor (clearly). Nutritional yeast is dangerous if you have medical conditions like Crohn’s disease, inflammatory bowel disease, et al. It can also cause migraines. I will wait for the Doctor’s answer about what she eats in her diet.

      I hope you can find groats. I cook them in the rice cooker and they are so yummy and chewy. Lower in calories and carbs than long brown rice. I'm able to find them in bulk at Sprouts. Maybe they have them at WinCo

    Niacin is not a mineral. Obviously the video that you are reviewing was paid off by the food industry, for instance the apples mentioned are most common varieties found in the supermarket. Ditto for the meat industry.

      Because saturated fat is literally killing people. It raises LDL cholesterol which causes heart disease.

      Per John Muir Health website: Your body makes all the saturated fat you need, so there is no reason to eat it. While it would be nearly impossible to eliminate all saturated fat from your diet, you should avoid it when you can. Eating too much saturated fat can increase your risk of heart disease.

      When you switch to whole plant based foods, these foods also give you pleasure without the jolt of hyper palatable foods like what you are probably referring to as pleasure foods. I have been eating whole plant foods for 12 years and every bite is tasty and pleasurable.
