- Today I have a guest on my channel. Mom joined me and shared her traditional pickling recipes that she made keto. Use this base recipe to make your own pickled vegetables. Swap the veggies out with cucumbers, carrots, onions, etc. You'll need a between 1 tsp and 1 tbsp of your spice blend. Use this recipe as a starting point.

Nice video ladies! I make these all the time as well. My recipe is simply to heat the onions for 20 seconds in the microwave (in the mason jar), then pour red wine vinegar on them and store in the fridge.

Brilliant video! Loved that mom was here to show us this recipe and I will be making a vast amount of these because they sound so delish! I think if I were going to make some pickled onions for a buffalo chicken salad I would have to use celery seed and a little black pepper or white pepper and a tad garlic seasoning the reason I think celery seed is because they usually serve celery stalks with buffalo chicken seems like the natural way to go.

Purple foods are incredibly good for the body. They are full of antioxidants called anthocyanins which have been found to reverse the affects of a poor diet; REVERSE!
Purple cabbage is another great keto veg.

I did mine with apple cider, red onion, real garlic, salt, cayenne pepper, peppercorn medley, a bay leaf, and mongfruit. I’ll let you know how it turned out.
My husband has a recipe similar to yours, with fresh garlic, peppercorns, fresh lemon juice and jalapeños. My granddaughters put then in a bowl and eat them like candy.

OMGoodness! I love your mother's accent! For the garlic rosemary pickling, would you use minced fresh garlic or garlic powder. Would it matter?

It is the Costco Kirkland brand No salt season. It is good.

How do you count the macros of this? Do you basically just count the red onions, since the vinegar, sweeteners, and spices are basically calorie- and carb-free?

I’m doing carnivore but I cant give up onions and garlic. Ps. If you stick your tongue out or put a piece of bread in your mouth while you slice onions it wont irritate your eyes.

Yes, quart size. I have a hard time getting them to last a week because they are so tasty LOL. Since they are pickled they will last a while in the fridge.

You two are cute! Gonna try these pickles this week. Just found your channel. I’m 56 years old and about 3 months into Keto. I’ve lost 17 pounds so far. I’m not an exerciser but walk about 3 miles a day. What do you do for exercise?
I walk to the park with my kiddos and do some body weight exercises on the park benches while they play. I'm going to actually use my gym membership and so some strength training in about 2 weeks. Great job on your journey!
What if i only have stevia packs instead of swerve? So 3-4 tablespoons of that for the sweetness? You think it will work? Thanks!

Good question! We already ate them all so we're making them again today. I'll ask mom for an alternative to the costco blend.
I thought onions were not Keto ? I know Vidalia onions are high in carbs .
Keto means less than 20 net carbs per day. There aren't any "keto" foods, just foods that fit better into your macros. A few slices were around 1 net carb. These were red (purple?) onions we used in this video. I personally don't mind spending my carb limit on single ingredient foods like veggies. I hope this made sense lol 😍😍😀

By the way, I hate stevia, it makes me puke. Can I use something else like Lakanto sweetner?

I put them in the fridge normally.

You can make it without the sweet and omit it. I personally don't like stevia by itself either but it does taste great with erythritol.
