Ive had this problem with the chocks many times. I found turning on ground power again then off fixes it and allows you to remove the chocks. Sometimes you cant remove the chocks in the efb either hence the ground power work around is necessary. I think its a bug
the 3d modelling is great overall but its definitely not perfect. take the small deck area in front of the glare shield for example just behind the A pillar, its not accurate , far too low and recessed, should be higher and at a level just above the lower edges of the windscreens. The main displays are completely matt and reflection free, but IRL they are quite reflective often with a blue tint. so there are areas that could be improved. there were a number of others too like these that even real world 777 pilots on the beta team didnt notice too. It took simmers and forum members to point them out.
So glad to have you back in the new sim. Back in the days, I enjoyed your tutorials especially with the pmdg 737 in fsx. Congratulations, you made it in the real aviation!
Realistic zoom is a pet peeve of mine from waaaay back in fs9 lol. I know some zoom out because of visibility in the sim, but I hate the warped fisheye effect on cockpits and externals. So much so I can't even watch videos or follow sim channels which do it. Much appreciate your real world perspective on everything.

when GSX freezes like that you can sometimes fix it by forcing the coulti app to exit via the task bar then restart it

In general, I find the physics inconsistent in FS 2020. While taxi, the plane weighing 168 tons reacts like a piece of cardboard.
True that, I think the 777 doesn’t implement the new ground friction model yet either
