  • Pour oil into milk ❗️ I don’t buy it in the store anymore. Easy and fast
    Ingredients and cooking:
    100 ml of milk
    200 ml of oil
    First, beat for 1 minute with a blender without lifting it from the bottom of the glass
    Then continue beating for 1 more minute
    1.5 tbsp of apple vinegar
    1/2 tsp salt
    Black pepper
    1 tsp of mustard
    Look! What thick mayonnaise!
    Homemade mayonnaise is much healthier than mayonnaise from the store.
    Ready mayonnaise can be stored in the refrigerator for 1 week.

    This is not a mayonnaise !! No milk in a mayonnaise, only egg yolk, oil and mustard.

    I'm a French guy and it isn't mayonnaise! 1 yellow egg, 1 spoon of mustard, and neutral oil during mixing. It's all...

      @@agathe255 Techniquement et chimiquement, une mayonnaise, c'est une émulsion huile dans eau...et c'est ce que l'on voit...le jaune d'oeuf, c'est juste l'émulsifiant, et une goutte suffit pour faire une mayonnaise...

    It's the emulsion of the eggwhites and the oil that make mayo look white-ish. There's no lactose in mayo. I see this as a seasonded heavy cream, either way this is similar to mayo.

      Its the lecithin in the egg yolks that helps emulsify the oil and vinegar/lemon juice. Typically egg whites aren't used in mayonnaise, but of course whole eggs can be used. Really white mayo was pretty much a north america thing 20 or so years ago, it started to spread in the mass produced store bought stuff.
      But if you're making it at home a few drops of warm water at the end will make mayonnaise white.
      I guess this recipe is a useful alternative for an egg free mayonnaise but a more traditional mayo (with egg) can be emulsified in a matter of a few seconds with a stick blender.

    Fantastic ! so simplified a recipe and seems no less delicious.... It does not matter if it is not a classic Mayo and so no nomenclature given to it by the creator but hard work in achieving this recipe is applaudable !!

    Home made mayo CAN be healthier - depends on the oil you use. Canola and other vegetable oils are inflammatory. Use light olive oil or avocado oil or even ghee. I've been making it with extra light olive oil (mild flavor) for a couple of years. I have tried store-bought olive oil versions and don't like the taste. I also add an egg yolk. Have not tried the milk version. Thank you very much.

      @@imapkru Add one egg yoke and a little lemon juice to a mixing bowl, you can use either an electric mixer or mix by hand. Then add your oil preference little by little while mixing and it will start to thicken up. (If you add the oil too quickly, it will break.) Then add siracha, dijon mustard, salt and/or pepper to taste. You can replace the oil with butter to make hollandaise. It's very simple to make mayo or any type of aioli.

    Сделала по вашему рецепту!!! Вкусняха, магазинский майонез почти не ем, заменяю сметаной и подсолнечным маслом нерафинированным. Теперь буду делать такой!

      Все-таки майонез надо на рафинированном делать, а нерафинированное в салаты добавлять и на хлебушек капать )

    Thank you for the tip. I use oil, egg, lemon juice and salt todo my mayonnaise. However, if I dont have eggs at home, I replace it with milk (consistency, flavour and colour are not the same, but it does the trick).

    А если в молоко добавить какао и сахар вместо соли ( соли можно совсем чуть-чуть для баланса вкуса) и взбить, по желанию можно добавить дробленные орехи, то получается почти Нутелла😁

    You can make it with egg whites, egg yolk or whole egg, It all comes out fine. But, for those who don’t like eggs to me this is a fine simple alternative!! 👍🏻

    In Spain we have siimilar recipe called "Alioli". Milk + oil + garlic + salt. There is no risk of salmonellosis in summer because we don't use eggs.
    En España tenemos una receta similar llamada "Alioli". Leche + aceite + ajo + sal. No hay riesgo de salmonelosis en verano porque no usamos huevo.

    Mayonnaise is made out of eggs, egg yolk is the main ingredient it gives that distinctive taste. This video shows a very tasty salad dressing, but it is not mayonnaise.

I enjoy cooking and spend lots of time with food, prep & cooking, so making mayo is a bit too much, but I'll do it from now on. Less waste and less expensive & better taste.

    U can add Kala Namak salt for "eggy" flavour instead of normal salt.
    Also use soy milk with at least 3% protein instead of milk to make it vegan. Might need increase the amount of oil though.

    Healthwise, it's nearly the same aside from the egg yolks. You can make mayo with just the whites. It's all about the protein chains, which is in both egg whites and milk. Interesting video though. New to me.😀

    interesting! I'm going to try doing this with coconut cream (the firm fat that separates from coconut milk and hardens in the fridge) and coconut oil. Add all the other seasonings, and I bet I'm going to have an amazingly delicious coconut mayo!!!!

      @@MW-uk5ji it was weird, but I'm glad I tried it.
      1. I didn't follow the proportions of the recipe
      2. the coconut cream was getting close to its expiration date
      next time, I'll follow along with the correct ratios AND I'll add raw garlic to it!!! :) I bet that will make it even yummier :)
      But, even though it didn't result in a good mayonnaise, it still actually turned into a pretty nice sauce to add to a stir fry - thanks to all the fat in the coconut cream, it helps make veggies more buttery

      @@catherineroelands1016 believe it or not, most of my attempts at coconut yogurt, a product I've been assured is easy to make, have hilariously failed and resulted in pink discoloring at the surface. What am I doing wrong?

    Делала такой. Он и правда хорош.
    Этот рецепт делайте с европейской не острой горчицей. Если берёте русскую острую,то её нужно брать меньше 1/3 часть чайной ложки или 0,5 ч.л. и подумайте стоит ли добавлять перец!

    good, better than all the
    different kinds of mayonnaises
    at the store, then I heard the
    FDA does not recommended
    making it yourself. This is
    probably much safer because
    germs don't grow on milk as
    fast as they do on raw egg yolks.

    Mayonnaise doesn't have any milk products in it, so that means it doesn't have dairy nor gluten. This is a beautiful rich delectable alternative for mayonnaise. I would try it first just by a spoonful then some on white bread with a sliced tomatoes salt, and pepper. With a glass of iced tea! I think it would be good on baked potatoes etc.

    Aqui em outro cana, aprendi a fazer uma maionese muito boa que não leva óleo.So leva um ovo inteiro cozido e uma caixinha de creme de leite , batida no liquidificado.
    Ainda não fiz porém os comentários falaram que fica muito bom

      @@marciaramblas1466 eu faço com ovos cozidos . Cozinho 3 ovos e boto na geladeira gelar bem, boto o óleo no congelador , 1 copo de leite começando a congelar , 1 dente pequeno de alho . Tudo estando bem gelado não usa muito óleo, coloco meio limão também quando já está quase no ponto. O tempero é a gosto . Eu particularmente coloco salsa e umas folhas de cebolinha . Fica uma delícia

      Misericórdia do ovo, eu em 2008 comi no sanduíche fresquinha feita no mesmo dia (nova) e gelada para não estragar. Fui parar no pronto socorro... Eu passei tanto mal que fiquei cega (cegueira temporária) e desacordei.
      Eu não sou alérgica ao ovo.
      Outras pessoas comeram e não passaram mal.
      Eu fui a única, não sei o motivo sei que minha imunidade estava um pouco baixa talvez seja por isso. Mas depois disso 2 dias internada eu nunca mais comi maionese caseira com ovo. Essa com leite e creme de leite, e limão e azeite é uma delícia 😋, eu amo o sabor é ótimo, já comi com alho, com pimenta, com cheiro verde esses sabores são uma delicia.

      It is. This isn't mayo, its just an emulsification. Thanks to the vinegar and mustard itll have a similar taste but the texture will be different and itll likely break or separate.

    Without the egg, it’s not really mayonnaise.
    I suppose it can still be used as mayonnaise.
    After thinking about it, and knowing egg is a binder, I’m wondering if this version will separate since it’s lacking the protein that should lock everything together.
    I might try this recipe.

    I have never used milk to make homemade mayo only eggs and good oil like olive oil or avacodo oil, never heard of this, I will try it with organic milk.

      Mayonnaise is actually very easy to do: 1 part of water, 23 parts of fat, lecithin in small quantity (which you can find in both the white and the red of the egg) then mix thoroughly with a hand mixer like up here. The fun thing is that you can play with the flavours substituting the fat and the water with your preferred food. You can make a tomato mayonnaise, you can even make it sweet as long as proportions of water and fat are kept and lecithin is present. I suspect that the mayo up here keeps the thickness only for a short amount of time before it breaks. That is why they ad Mustard, which has some lecithin in it and not a lot is needed. You could do the same with an egg yolk or part of an egg white and you would have the same result. The first part of the emulsion should not be stable, the oil is just reduced in microbubbles but unless lecithin is present water and fat will not stick together.

      This is how I make my vegan mayo: Soja milk and oil (seasoned like in the video) plus yeast flakes. Yummi. Soja milk gives a better stabilisation than cow milk so you can User less oil. I like it more like this.

    We do ours with the addition of 2 egg yolks and dry mustard powder instead of prepared mustard. Add the oil slowly while using the blender and it comes out thicker.

      Se vc colocar o leite no freezer um pouco antes de usar e qdo for fazer colocar o oleo coforme for batendo vai ficar consistente mais rapido com menos oleo

    (o tamanho vai depender quantidade desejada)
    Depois de frio bater com. Leite gelado..
    Ex: um inhame tamanho de uma batata média...
    Um Copo d e leite gelado e uma Colher de óleo, eu gosto óleo de girassol.
    Só Bater e temperar a gosto, fica ótimo e super saudável.

    Its egg yolks not whites, there are no egg whites in mayonnaise. Egg yolk, dry mustard, oil and acid (vinegar or lemon juice). I will also yield that Dijon mustard can be substituted for dry mustard because of lack of availability. If you're not following the real recipe, is it really mayonnaise? If you put olive oil, it's called Aioli not Mayonnaise. both are emulsions made with egg yolk, lemon juice, and oil but if the French differentiate between olive oil and other oils. Other flavorings went into Aioli's across Europe based on local preferences. My point is this, a pig in a blanket is not pork wellington, and whatever this person made is not mayonnaise, nor do I understand why milk and not egg yolk.

    Nah. Real mayonnaise is dairy-free. It's one of the best things about it. Especially if you're allergic to dairy! And it's so easy to make the real thing anyway.

    I'm thinking I could use powder coconut milk. I buy mayo but seldom use it due to the eggs. I worry about contamination. So, this looks great. Even with milk it would be better because there is no mistaking spoiled milk. Would coconut milk work?

    Я делаю всегда майонез з продуктов: масло, яйцо, уксус, горчица, соль и сахар. И майонез получается густой и очень вкусный. А вот из молока с маслом ,я незнала. Обязательно попробую. А вот ,Вы не сказали по моему, какой жирности должно быть молоко для майонеза?

      Одно время делала майонез на молоке, но недолго, потому что через некоторое начинает появляться жидкость, видимо вода. Да и смысл заморачиваться, если все равно есть масло, т.е жир.
      Поэтому вернулась к классическому майонезу, просто едим его по большим праздникам. В основном заправляю сметаной или йогуртом

      @@HiIamChels the yolk. In a lot of bird breeds the yolk is orange or red not yellow. It's more common to see a dark yolk in Europe than in the US because of different approaches to chicken farming. In some European languages, the yolk is referred to as the 'red of the egg'. In Basque it is "gorringo," meaning "red bit", in Italian it is: "rosso d'uovo" which literally means "the red of the egg". I'm assuming that Mauro Cogoni is Italian, given their name.

    Это НЕ майонез. Майонез ВСЕГДА делается на яичном желтке, точнее при его эмульгировании. Именно для использования желтков он и был придуман, года белок использовали на каменную кладку крепости. Майонез без желтка- это как щи без капусты или борщ без свёклы. Так что это просто соус. Возможно, вкусный.

    One egg (yellow), Dijon's real mustard (same proportion), then addd arachide oil, whith a batter add slowly. Then after add the salt and peper, my favorite is the piment d'Espelette. That's all.
