We make this sambar regularly in our homes. We also make one with karamani, pooshanikka, Chena kezhangu etc. Called poricha kozhambu which is again a classic recipe.

Fantastic recipe. Deena ji, your humility is astounding. You prompt the cook to give both the religious and scientific reason for a particular ingredient - like back chana, castor oil for cooking toor dhall, use of solid type asafoetida (not powder), combining white pumpkin & capsicum etc. Normally moong dhall is not used during auspicious occasions. Lots of fine details given by Thangam mami. Thanks Deena ji.

The reason we have been told for not using onion, garlic, and vegetable like radish, drum stick, bottle gourd (surakkai) and a few others is, these vegetable have rajasik gunam. And we have been told to avoid rajasik and taamsik food. In Shrimad Bhagwad Gita adhyay 17, Bhagwan Krishna classifies food into three categories: satwik, rajasik and taamsik. And HE explains to Arjun how food affects a man's nature.
