At 10:00 min, my immediate association was - Lester Young. There is something smooth and pleasant in the tone Simon produced with Aizen, that strongly reminded me of Prez.

I think Jody jazz hr is closer to a Meyer with medium chamber. I think large chambers Otto Link comparison is right. Medium chambers are more like Meyers as benchmarks.

I have tried the JodyJazz HR* on my alto and tried a 6M and a 7M and went with the 6M as I found it easier to control for me. I found the H ligature didn't sit well on the mouthpiece even when tightened it would tend to move around a little and it left 4 indents on the sides of the table of my reeds and mouthpiece from the sides of the H which I didn't like. I ended up using a Francois Louis Ultimate Ligature instead. I tried Rovner Dark and Light ligatures on it and got a more centered darker tone over the Francois Louis, but the low notes didn't come out as easily with those.
Before getting the JodyJazz I was playing on a Selmer S80 C** and when I tried the JodyJazz HR* the first time, I noticed how harder the rubber is compared to the Selmer and it took me a while to get used to the feeling of the harder rubber in my mouth. Playing on it often, I now find its one of my favourite mouthpieces so far.

Aizen recently came out with the Mark II version of the LS mouthpiece. I had an opportunity to test it against the D'Addario Select Jazz mouthpiece and was utterly impressed by Aizen LS Mark II. (I think the price difference is well justified.) Was the Mark II version tested in this video? PS. Excellent work, Simon and Sam, thank you both.

This was the latest version of the LS (Mark II as you call it).
