It's waaaaay heathier. Our Cauliflower mashed potato recipe is super low in calories, fat, carbs, but high in protein. They best part is that it tastes... so... good!     I know I commented before on this video article, but I have to say... this one (1) video alone surpassed all my accumulated views for the past 4-5 years I have been actively engaging with RUclips. Now that's impressive.

      Thanks, Man! I made this when SHORTS first came out, and I got lucky and it got like 63k of those views and about 89 subscribers in 2 hrs.... then it dropped way off. Most of the shorts end up getting pretty inflated views like that, but it's the only one I ever made that did that well. They are pretty fun to make though.. I can do a lot of cool stuff with em since they're under 1 minte.

    Yum. Making for dinner tonight in my ninja! I have a much smaller processor though but I've had the thing for years and it still works like it's brand new. I think I like mashed cauliflower more than potatoes

      Thanks! It is. The cheese is mozzarella, so it's not too bad as far as cheeses go... Way better for you than potatoes. No carbs either.

      I'll wite in all the ingredients for you right here.... Cauliflower, mozzarella, minced garlic, truffle dust, chopped chives, and black pepper. The one you couldn't make out was probably the truffle dust.

      I was experimenting with this and nonfat cream cheese, and part-skim mozzarella both taste about the same and the calorie count is quite a bit lower. There are some other options but they don't taste as good as these ones.

    Why so much salt?

      Using salt to blanch lowers the boiling temperature of the water... You use a lot since almost all of it gets thrown out when you finish boiling and. Ost of it doesn't absorb into the cauliflower. . However, if yiu end up using a lot of cheese in the cauliflower puree, you would end up using lmuxh less since the cheese is a bit salty already, and you don't want to over season.

      LOL... I know... When I was posting that, and researching titles, all the mashed cauliflower searches included the word potatoes for some reason, so I just went with it for indexing purposes. When you get it in restaurants out here, they use the word potato in there for some reason as well... I suppose they figure people won't understand that it's a mashed potato substitute or something.

      I used to sniff the glue in Elementary and Grade 1, though not often. Not to get high, I just liked the smell for some reason. I ate sugar to get high as a kid. Some kids used to eat the glue. Gross. lol! I never crossed that boundary. :D

      No potato in there. Cauliflower is the substitute... For some reason, every menu I've seen it on has always used that word in in it though. It's probably just to draw the comparison for people that have never had it before so they know what it's supposed to be like.
