When we say something is "canon" we essentially mean what's officially part of the story. What aren't canon, therefore not part of the story is filler. Anime canon and Manga canon for Bleach are especially different in the sequel series Thousand Year Blood War with Kubo being the main storywriter himself and making changes to the story which he deems fit, like 7-8 years after having finished the original story.
Not gonna lie when I first started watching bleach it was the bount arc that turned me away from it for like 2 1/2 years. I didn’t even realize it was filler.

I've watched all of Bleach and I can say that Zanpakuto Arc is great to watch, Bount Arc is pretty boring but overhated and Regai Arc isn't as good as Zanpakuto Arc but still pretty solid

Because it can destroy the pacing of a story, and also hinder character development, as some plot points from fillers are not mentioned ever again or influence the main story in any way. In some cases if the filler is excessive and bad it can make you lose interest in the story overall. This happened to me back when i was watching naruto on weekly releases, i swapped to the manga and eventually watched the anime again but skipped a lot of filler stuff from the anime.

Definitely do not do that. There is so much that happens in between that’s cannon, and is enjoyable. You’d be skipping everything that unravels with Aizen, Ichimaru, and Tosen, along with the introduction to Arrancars and Vizards

The only real issues I have with The Bount arc is that it was about a third longer than it needed to be, and it was very slow to start.
