Before the big companies ran out the small ones, at least the bakeries were good. But that was 40+ years ago. Now almost every bakery -- other than the smallest ones run by people who learned in France or from the French -- use cheap ingredients, and the taste is as bad as the texture. :(
Its such a terrible shame when cheap ingredients are used. Unfortunately it's the case often here in Italy too at the actual pasticcerias. They just don't quite compare to the french patisseries
I suspect some people are trying to eat healthier; cutting down on cream, butter and sugar. Also, the masses have become accoustomed to cheap junk food and don't know what they're missing. .
