I used to make grape juice with concord grapes way back when my children were young! If you fill half gallon jars with grapes, top with 1/2-3/4 cup of sugar depending on sweetness of your grapes, then water bath it for 30 minutes, when you open the jar, you can strain it through cheese cloth squashing the grapes to remove all juice and then top it off with another 1/2 gallon of water, you will get one gallon of grape juice! If you like your juice really sweet, you will need more sugar, but we preferred our juice to taste more like the natural fruit. You do not have to remove the seeds if you plan to strain and squash the grapes through a couple layers of cheese cloth when you pour it out! If you want only 1/2 gallon of juice at a time, then use quart jars and fill them full and add even less sugar!
This is another great idea. I saw a lady from our church post about her doing this the other day but didn't know exactly what she had done. I am sure this is what she made. She did use her muscadines though like you were talking about using later. You mentioned your house being on a slope and the water being unlevel in the pot, a way to fix that is to level your stove. The stove has 4 feet that adjust in and out. They are normally plastic and just screw in and out. You can get a little torpedo level and set on the stove surface and level that right up and fix that issue. They normally come in and out about 2 inches. You may already know that but if not, might be useful to you.

I have done this for years, but put the sugar in with the water so it disolves good. I have done it in the fall and picked my own our of my yard. Concord grapes. So good! Then strain the grapes off and save the juice. So good! Never tried the green ones though

I wonder if you can do muscadine’s the same way, might have to try this next year with ours. Check your stove for adjustable feet, most stoves have adjustable (screw type) foot pads on them to level them out.
Love robbing the stores of reduced produce. I'm thinking of like fruit cocktails here as your filling the grape jars. Can you mix and match fruits and do the same process?? I have never seen those grapes before. Good to see you my friend ✌💗 happiness
When water bath canning do you always cover the jars with water? Over the lids? I never done that i fill it up half way up or so usually processing for 20mins or so with a lid on or slightly off to let some steam out depending on how well its boiling I get seals and my jars last but maybe i should be covering them? I need to inbox my pressure canner eventually....i need help maybe i should do it live lol and get advice from pros ;) Much love xoxox

Water bath canning must be covered or it isn’t considered safely canned. There are steam canners though that will can safely without being covered.
