We made stuffed shells with a tofu ricotta spinach stuffing baked with a simple creamy pumpkin sauce.
We also made an almond cranberry cookie for dessert.

Recipes - We don't measure much in our home cooking but here's a guide for what we made to help you:
Ricotta Mix
Blend together 2 blocks of tofu (we used firm), 2 tsp salt, 1 tbsp onion powder, 1/4 cup nutritional yeast, 1 clove of garlic, optional the juice of 1 lemon or 2 tbsp vinegar.
Saute 1 onion, 2 cloves garlic together with grapeseed oil. Add 1 package of frozen spinach. Mix the spinach into ricotta mix.
Creamy Pumpkin sauce
1 can pumpkin puree, 1 can coconut milk, 1 can diced tomatoes
Season with 1 tsp thyme, 1 tsp onion powder, 1 1/2 tsp salt. Pour over stuffed pasta
Bake stuffed shells at 400F Convection for about 30-35 mins.
Almond Cranberry Cookies
1 cup coconut oil, 1 1/2 cups coconut sugar, 4 tbsp ground flax + 8 tbsp water, 1 1/2 tsp almond extract, 2 1/2 cups flour (you may need to adjust this to your climate), 1 tsp baking soda, 1 cup dried cranberries
Mix together until just combined, bake at 375 F for 10-11 mins

Hi there Mary! I tend to think stuffing anything is always a lot of work and don’t do it often but came to realize that you’re right, it’s delicious! So satisfying, so hearty and I have to try stuffed squash with curried rice that sounds so good 🤤
@@thehaipath it can be a lot of work, you’re right, but I just use leftover anything to stuff into a squash, an eggplant or zucchini etc. stuffing it with Mac and cheese or a thick chilli or any leftover grains sautéed with the insides of the veg and anything else that strikes your fancy 🥰

I would have never thought to put tomatoes with pumpkin but that actually looks really good. Was it diced tomatoes and how much of the tomatoes did you add to the can of pumpkin? That dish looked so good.
Hello friend!! We added about 3/4 of our can of diced tomatoes. You could probably use the whole can too if you have! I have a written guide of the recipe in the description of the video! Try this it’s actually really comforting and delicious!
