Freediving for HUGE Sea Urchins & Cooking Uni Pasta from Scratch | Catch & Cook

- Today Alex goes freediving with Matts (Fisherman's Life) and Sarah and they harvest sea urchins to help with the declining Abalone population. We show you how to make fresh pasta along with a delicious uni sauce made from the sea urchins.
Pasta Ingredients: 1 1/3 cup ap flour, 2 whole eggs, 1/2 tsp of salt
Uni Sauce: 8-10 sea urchin gonades (uni), 2 tablespoons butter, 2 tablespoons heavy cream, 2-3 tablespoons parmesan, 1 clove garlic, 1 shallot, chives
Fresh Pasta
1. Pour flour onto clean surface and create a well in the center (also don't forget to add salt like we did!)
2. Crack eggs into well
3. Mix eggs and flour together with a utensil
4. Once mixture becomes crumbly, knead by hand until it forms a ball
5. Wrap ball in plastic wrap and let sit in refrigerator for at least 30 minutes.
6. Cut off a quarter of the dough and shape into a rectangle
7. Roll pasta dough out to size 2 with pasta roller
8. Fold pasta into thirds, and place pasta back into the roller vertically
9. Roll pasta out until desired thinness
10. Use desired pasta cutter to create the pasta
Uni Pasta
1. Puree uni using a food processor or by pushing through a mesh strainer
2. Incorporate heavy cream and parmesan using the same food processor or by whisk
3. Heat up butter on pan
4. Once butter is dissolved, add in garlic and then shallots to cook down
5. Once browned, add in uni-cheese-cream mixture and cook on low heat until fully incorporated
6. Toss pasta in sauce
7. Place and serve

staining of the skin is from the natural dye inside the sea urchin. I believe the dye was once harvested to make clothes and stuff until people figured out how to make synthetic dye in the 1980s. there's also a shellfish out there named Murex Snail that produced a dye color called Tyrian Purple that was used in ancient time. That's how Royal Purple was made.

Julian G. There’s a few places but we went to Santa Barbara fish market who run out if you dont get there quickly. Probably the sweetest Uni we’ve ever had!

I wonder how much kelp was in that spot a decade ago....
The reason there is so little roe in there is because the sea urchin are starving. There are to many purple sea urchin they are eating all the kelp forest. If you can take the max you can of the purple sea urchin.
