Even 50 years ago when I started diving, our beautiful California coast was overrun with sea urchins. They had severely damaged the kelp beds. We did our best to keep their numbers down but it was a losing battle because they reproduce like crazy. I'm so glad to see you keeping up the fight Taku. Step on a few for me! Cheers!

as long as you're still young (which you are) you can change career paths however many times you want. As long as you're motivated to challenge yourself and go for it. Sky's the limit.

Just like with lion fish in Florida. See one, kill it. They're very delicious but even if they aren't an edible size you should still kill them because theyre messing up the ecosystem pretty badly.

There's Italian recipes for spaghetti with sea urchin, almost like the egg in pasta carbonara. I loved having uni rolled into nori, dipped in tempura batter and fried up quickly. So good!

If you want to have a terrific use for uni and don’t like to eat them try this. Take a bucket and smash them into little pieces pour that mixture into a milk carton and freeze. Next time you go fishing use the frozen block for chum. You can buy net chum bags online. Great chum for fishing near kelp.
Hop on those herring, Taku. They're spawning in Sausalito right now. I caught some last night fried them up today, delicious- and the milt sacks coated in corn starch and deep fried taste just like shrimp chips if you let them get crispy! I liked them better when they were cooked longer so they had more of a crust and were less creamy/liquidy. When they're cooked for less time, they're insanely creamy with a mild salty and sweet flavor, just like the white gelatinous slime that oozes from crab joints after they're cooked, which you might prefer.
My grandson graduated from the Culinary Academy of San Francisco and did an internship in San Jose on Santana Row for free too and after a month they hired him now about ten years later he’s now an executive chef at a members restaurant in San Francisco. Being a chef is a wonderful profession as you know. I just love the cooking you do outside it always looks fantastic. ❤️😁👍🏻 Doesn’t the Uni have bacteria from the ocean water, just wondering since it wasn’t cooked.?

I just watched your video where you made risotto with golden chanterelles, and I decided it was time that I should learn how to identify mushrooms so I could do the same. Just yesterday I was able to make my own golden chanterelle risotto, and within the last two days I was able to collect over 5 pounds of golden chanterelles for my family and friends. Thanks for the inspiration 🍄✌🏽
My brother and I used to take a hammer out to clear urchin. He called it Mjolnir. The fish love it. The lobster population is heavily affected by urchin population. Just realized we use the same brand of rice. I must have learned about it from your channel.
I would love to see the basics of tools and what they are used for. Like different rods and reels! I have been LOVING your videos. I am moving to Maine soon and can't wait to explore their coast more! And forage there. I am currently in Houston and it's not a very fruitful place.
