Tried making this one just now and I used the measurements in gram. It's true that diff flours have diff weight or quality. I just hope you did measure yours manually and not just rely on conversion tools online. I followed first 384g of APF, which means 128g/cup and it's so wet. I increased to 140g....145g... then finally 150g, still the flour doesn't seem to create gluten. Out of frustration I dumped in maybe 1 cup more (did not measure) and then it started getting together. After 1st rise, the dough is really soft, similar to pizza dough. You may not have added eggs but its absence was replaced by oil as the main source of fat for this recipe. I will edit once I see the results.
yes I am confident that my measurements are true & no falsification✋hence it is the actual exact weight & not just by relying on online conversion tool. Dough consistency depends on the protein level of the flour which forms the gluten so every flour absorbs liquid differently even if you follow the exact weight. The higher the protein of the flour the more sticky the dough will be. And whether all store-bought flours are labeled as “all purpose flour” doesn’t give assurance that they are all equal in protein, so dough will not always behave exactly the same as the recipe. This is the reason that I always note in my videos to add flour if dough turned out too wet🙂👍For adding oil, yes of course there will be always substitute for the absence of something. I provide eggless recipe particularly for vegans & for people with health condition who can’t tolerate eggs🥰Hope your doubts on this recipe have been clarified. Did you placed the bread in the lowest part of the oven? How do you get the brown color on the top? My oven has also bottom flame and never gets brown on the top unless I turn the "broil" option on, I can't have both options on at the same time. 😟
i placed on the middle rack. oven has uneven heat inside using bottome heat only so you need to manage well, you may bake it for a longer time until brownish color.
windowpane is to test whether the elasticity of the dough is good enough. but for this bread, as long as the dough is smooth regardless of achieving the windowpane, the bread would still become soft😊.
hi, it could be due to some factors like; *most of your yeast cells was dead *yeast is old *water might be not warm or too hot *room environment is cold or not warm enough *over kneading

Is really good if you add some sweetened condensed milk. Mix in about 1/8 a cup into the warm water. Made for a really good French Toast bread!
