I think you are talking about baklava layers with walnut pieces and honey . However there is also recipe fats with ground walnut and shifts inside. I do that way .
1) Are you putting egg whites on the rolled-out dough before you spread the sugar filling? Egg whites act as glue to keep the filling inside 2) are you using the exact measurements in this video for your filling? 3) you may be cutting them too small. 4) you may be using too much filling. Maybe you're not rolling out the dough as big as what's shown in the video. Try using less. A little tip from me - after I create the gata log, I put it in the freezer for 15 mins to make everything solidify

What do you do with the portions of dough that you cut off and the half filling that you did not spread????? How much vanilla extract? 1 or 2 TSP??? Please advise!
I don't have any leftovers 🤷♀️ just devide the dough into a two parts and the filling too. Then spread one part of filling on one part of the dough and do the same with other half 😊1tsp of vanilla extract 🤗
Nomads never had the culture of baking. Also the word gata does not mean anyting in your language, whereas in Armenian գաթայ means dessert with filling.
