I been doing this wrong all along. I have been completely covering the meat and veggies with broth or water... no wonder it had so little flavor. Did half cup of balsamic vinegar and a cup of water this time ...

I would check them 30 to 60 minutes earlier. Poke them with a fork to check if they are as soft as you like them.

Yes but you need to stay home for that. I like to use the crockpot when I leave to go on errands. If I am home then I just cook them in the oven.
