Meatballs
500g Ground Chicken Breast
500g Ground Chicken Theigh
100g Grated Ginger
2ea large egg yolk
1Bunch Thinly Sliced Green Onions
1. Combine chicken meat, grated ginger and egg yolks into large bowl. Season with salt and pepper and mix.
2. Cook off a small portion of your chicken meat balls to taste for seasoning.
3. Form into small 1 inch meatballs. Set aside to cook.
Broth
750ML-1L Chicken Bone Broth
50ML Soy Sauce
50ML Mirin
50ML Sake
1. Combine all liquid and Set aside
Vegetables
2ea Baby Bok Choy
200g King Oyster (or mushroom of choice)
1ea Japanese Green Onion
4-5 Shitake
Half Bunch White Beech Mushrooms
1/4 head Napa Cabbage
1/2 Pack Tofu, cut into 1inch Cubes
1. Prep All vegetables and set aside

The best thing about Nabe is the fact that the soup gets tastier and tastier while you're eating. You usually start with just some kombu dashi, just water and kombu, bring it to 60ºC for a few minutes (if it boils it's not going to be bitter, but the kombu will make the stock slimy, kombu is a gelling agent, you can even do spherification with it.). after a few minutes at 60ºC, remove the kombu and you are ready to cook the ingredients. one by one they will impart flavour to the clean broth and you'll end up with a delicious soup, that you can finish with noodles or just a scoop of rice. If you soak the kombu in the water for a few hours before dinner it's even better. For the meatballs to hold, there's two things to do, first usually there's an egg to act as binder, but also, the way you mix the meat will make it sticky.

to help binding in asian style meatballs, you can try beating the meat mixture in one direction until it develops sticky-stringy texture (optional addition of egg white for extra help). Resulting texture is firmer and slightly chewy but in the most pleasant of ways.

Idk about the rest of you, but I’d watch a full version of the chef dance without music.
I recently bought a hot pot because its the only cooking appliance that is allowed in my dorm and my cooking level is sandwich and/or microwave. Two days ago I tried cooking in the hot pot for the first time and it didn't turn out completely to my liking. Actually watching someone mess with the broth/ingredients in the soup is super helpful for a complete beginner and I will definitely give this a re-watch before I use the hot pot again. This video was perfectly timed!

For a binder, use a corn starch and water slurry. A trick used in Gyoza and also Cantonese dumplings
I may have to try a variation of this in my terrine.

Looking forward to binging more chefpk videos, I basically have a year of content to catch up on.
I would say add half cooked rice since they're going to simmer forever. We make an Assyrian meat ball dish that uses soaked rice in the meatball as a binder and after 30 minutes or so of cooking, the rice is tender and soft.
Also, would they retain more shape/add more flavor if you were to do an italian meatball frying before adding it to the nabe?

Chicken meat is reeally moist, a lot moister than pork(I think) and beef, which makes for excellent meatballs without any adhesives. We don't really carry things crackers or premade bread mixes, so I usually make do with whatever if I can't remember to buy something.

Not too sure on the nutritional info but it shouldn't be bad at all! The macros are mostly coming from the meatballs, Tofu and the broth. Also rice if you have it with that.
