  • Introducing Farandole des îles Recipe.
    On the spur of the moment I developed this recipe! I took a good look at the overripe bananas and visualized this recipe. I had a few strawberries in the fridge and a couple of apples which came in handy; they paired very well with the caramelized bananas and strawberry sauce. A touch of Caribbean and French flair, a scrumptious recipe, that's hard to resist! Farandole des îles!
    First:
    Recipe for strawberry sauce:
    Ingredients:
    2 cups strawberries (for syrup)
    About 20 strawberries cut in half to use over fruits.
    1/2 cup white granulated sugar.
    1 teaspoon fresh lemon juice
    1/4 cup water
    1/2 teaspoon cinnamon
    Instructions:
    Wash, hull, and chop the strawberries.
    Transfer to the blender, add water, and blend until smooth, for about about 20 to 30 seconds.
    Then add them to a medium sauce pot, heating over medium heat and bring to a boil, about 4 minutes, stirring.
    Add sugar, cinnamon, and lemon juice. Stir well.
    Reduce heat and simmer for 15 minutes for a thinner sauce and 20 minutes for a thicker sauce. Keep stirring.
    Remove the pot from the stove and allow the sauce to cool completely.
    Second:
    Ingredients:
    2 over ripped bananas
    1 apple
    1 pound fresh Strawberries
    1 tablespoon butter
    1/4 cup sugar.
    1/2 teaspoon cinnamon
    1/4 teaspoon nutmeg
    1 teaspoon lime juice
    Instructions:
    Peel and halve each banana lengthwise.
    Wash, core, peel, then cut each cored apple quarter into 1/4 inch slices.
    Wash, hull (remove the calyx and stalk,) cut strawberries in half.
    In a small skillet or frying pan add the brown sugar and butter, gently mixing or stirring as it melts. over medium heat.
    Brown the bananas 5 minutes on each side.
    Add the sugar, cinnamon, nutmeg and allow to caramelize for 2 minutes.
    Transfer to a plate.
    Arrange the apple slices neatly over the caramelized bananas.
    Spread the cane syrup over the apples.
    Arrange the strawberries over the apples.
    Lastly, spread the strawberry sauce over the fruits.
    Voila! Your super delicious Farandole des îles

    Note: For strawberry sauce, once cooled, you can serve over ice cream, pancakes, tarts, or enjoy with any dessert! Place the strawberry sauce in a jar, cover, and refrigerate for up to 7 days.
