In a real world situation, the driver is a high value target. Could the front passenger take over? Depends on the console and stuff getting in the way. Your question is a great one to ask as you work with your team: "what do we want to do if..." and then practice the answers to see if they work.

If the driver is disabled, you remove the driver and drive away, if the vehicle is disabled you move the vip behind said vehicle (greatest amount of metal between assailant and target), regroup and exfil if possible. Car doors are not effective cover no matter what hollywood tells you.
They never used car doors as cover. They got out and immediately put sights and fire down range. Just because the natural position after exiting a vehicle is BEHIND A DOOR doesn't mean they are expecting it to stop bullets. Additionally, even though it won't stop a high caliber round, any material between you and a shooter can reduce the velocity and penetrating traits of incoming rounds shape, making your own body armor, and even your bones, more effective at preventing deeper penetration. Those are facts.
