    Finally getting my beets out of the garden in December 😂, canning pumpkins, beets, carrots and veggie stock, and re-organizing the pantry. Whew!

    Raw pack for carrots 100% .
    I like doing quart jars of carrots, celery and onions for stews,soups, roasts.
    Good luck with your surgery....I'll have my fingers crossed for you.

    A used canning lid makes the absolute best pumpkin cleaning tool!

    When I make broth, I toss all the parts into my pot and then compost everything after I’ve taken all the nutrients out of them. I use the dark greens from leeks, onion peels, carrot ends - they all go into my pot and once I’ve used them for stock, it goes to compost after that. An option for you to try.

      That’s great Emma! For some reason I am averse to using the carrot tops in my stock 😂 but I’ll definitely put the leek tops in next time! Yes, not much here doesn’t go in the compost. I love the fact that nothing goes to waste

    Hi there, I am a new subscriber. How do you find pressure canning? I am used to water bath canning but am nervous about using a pressure canner.

      Oh I was too Laverne! I watched a ton of RUclips videos and read a ton of articles online. Read my user manual for my pressure canner a few times 😂 and then took the plunge. It’s not so scary after you do it a few times! Cheering you on!
