Muri Ghonto Chal Diye-Bengali delicacy of fish head cooked with rice

- Muri ghonto can refer to a large number of dishes that use fish head and another main ingredient (such as dal, or potatoes, or cauliflower). This particular variation is the one with rice.
Any culture that truly loves fish holds the fish head in great esteem. There are hundreds of different ways in which Bengali cuisine uses fish head-sometimes as a way to flavour other ingredients such as vegetables or dal, but also, often the head is the star of the show. The muri ghonto is such a dish. The fragrant rice here almost seems to be a receptacle for the fatty goodness that is rendered out from the fresh carp head.
Make muri ghonto as the main for your next gathering instead of the same old basanti polao.

As a person who does not consume any fish at all and is quite often fish shamed (what kind of a bong does not eat fish!), I am loving this video so much. Bong Eats is so much more than a recipe. Had my dida been around, I am sure I would have passed on all her recipes to Bong Eats to make a short film out of it. Thank you.
Don’t let my last name fool you but I am also a Bong who is not big into fish (mother’s side is Basak, I don’t follow ANY paternal side customs/traditions/rituals). The only way to get me to eat fish is only if it is rui or bhetki. 🤣

Not the muri ghonto we are accustomed with in a bangal household of north bengal. The rice is much less and thing is more "makha makha" instead of "jhorjhore". Worth a try though.

Absolutely. Have always had a very different makha makha version at my Bangal household. Our version is spicier, has much less sugar, also has onions and garlic and does not have dry fruits, green peas or cauliflower. This looked more like macher matha diye fried rice. Nevertheless, the attempt is also commendable considering it’s such a messy preparation and there aren’t many videos of this dish on YT.

I remembered my mother one day cooked this recipe for one my Manipuri friends......she gave its new name “fish head biriyani”.... so for me it is “fish head biriyani”... nice recipe 😋

In chittagong Bangladesh different types of dal (pulse) and shim (beans) and different seeds (a local ctg seed called pelu used mostly) are used instead of rice,some times a little govindavogh/katarivogh is used,but not that much & It's more of gravy than jhorjhore rice..btw it might be different in north bengal.In summer lau (bottle gourd) and in winter tomatoes,eggplants and cauliflowers also served.Our hindu neighbours send to us in cities but in village it’s so popular in winter and late autumn that it's made in almost every house 💚

Usually all recipes of bongeats is superb, except this one. I tried out this recipe point by point and it turned out to be fish head tehari rather than the quintessential muri ghonto...will have to try other recipes next time

I have eaten this cooked by a bong raised in calcutta - and I would recommend it to anybody who would eat fish. she didnt add nuts nor potatoes or peas. I am quite awry of mixing anything in cooking fish - not even rice. But this is a surprise find.!

I have learnt cooking from my mother in law. Dhaka and faridpur . So it was always quite 😅 a bit. I am quite quite liking this recipe. This is from where ,the origin or is it your own recipe
