I still remember Chef Ricky Cheung when he was the executive chef of Scala Restaurant at the Renaissance Harbour View Hotel (my layover hotel) back around 2002-2005. My Hong Kong wine friends and I enjoyed his cooking and we patronized Scala every few months. Greetings to Chef Cheung!
