I don't wana give up but I'm gonna be honest with you I am a good cook with a good intuition but the "trick to masa" ? I think I have met my match!! it's so frustrating but I need to GET THIS!!
I rather this video than the Spanish one Jessie , just because you are using the kitchenaid mixer . You know busy moms do not have time to amasar by hand! no wayy!! Last year I tried to make them in the kitchenaid but it was a mess because the quantities, the masa started to get off the bowl and OMG!!! bandeja y mano then :( too bad .. now thanks a lot. I made this today and I think the amount you have shown for broth (7 cups) is way too much! I am glad you said to add it slowly because otherwise I would have ended up with masa soup! Anyway, I think I only need about 2 1/4 cups of broth .... perhaps you should correct the measurements above???
Sam Jasperson Thanks Sam! That makes a lot of sense ... I am glad I was adding it slowly to the mixer! I think they turned out good, the dough handled nicely and they are now all steaming away .... at least they smell really good!
Sam Jasperson Just tasted one ... 2 TBS of salt was a bit much but they are really tasty and the dough was very nice and light! I added paprika, chili powder, garlic powder and ground cumin to the dough as well ... so very flavorful! For the filling I used leftover turkey meat seasoned with sauted onions, garlic, paprika, oregano, ground cumin, chilit powder, black pepper, cayenne pepper, salt and 1/2 cup turkey broth. Wasn't sure it would work out ... to my delight it worked out beautifully!

arlene garcia yes 4.5 or 5qt is fine, even a very good hand mixer will work. Like Hamilton Beach. I have Kitchenaid hand mixer, but Hamilton is better.
my mexican store was soldout of the liquidy manteca so I got farmer john lard which is in solid form do I still fluff it up like the non solid manteca..anyone use the solid lard? did you fluff it up first?

I am sorry but could you please change the amount of salt you are sugg? Either I have suddenly become way too sensitive or it is way too much. Try two teaspoons.
I found out that when I used the water to see if the masa was ready, if the masa isn't mixed well then it won't float.. You have to continue to mix it more so the masa gets air. This makes sure that your masa comes out thick and "fluffy" esponjoso . Baking powder helps of course but making sure you mix the dough for a long time also helps

Mine always floats n today is not floating the masa looks more quebrada …but my measurements r the same
