I have NEVER made tamales, but I did this Christmas. I used this recipe for my masa and OMG! My husband who is a somewhat picky eater loves these tamales. The masa is so moist and soft and delicious! Thank you so much for this recipe! It was so easy to do. I was so intimidated to make them and watched so many videos that made the process seem so hard, but this recipe is simple. They were genuinely the best tamales I've ever eaten! Ty ty ty!!!!

This reminds me of all the slave labor us kids had to put in for great tamales!
Grandma , Mom and my Aunties
I didn't remember the tricks and tips till your video.
I remember sitting around the table and being part of the assembly line making all different types chill Colorado , Chill Verdes ,Green chili con cheese, sweet with raisins , cinnamon and brown sugar mix .
My sister tried chocolate but it didn't work to good because when it steamed all the chocolate melted out ! Hahaha
You can try anything to see if it works just try it in a small batch before you go on a full production run !
Happy Holidays to You and Your Family !!! ;-)

Thanks ever so much for your most awesome video! I had never heard about the water test before, and was so excited when my spoonful of masa floated on the very first try. That was the first time I've ever been 100% certain that my masa was ready before I started putting my tamales together. It sure beats my old method of crossing my fingers and just hoping everything turns out okay. ;-)
I have to admit, I got discouraged right away, as it seemed like I was going to wind up with a big bowl of soup instead of masa. But since I don't have a nice heavy-duty mixer and am used to blending masa by hand (well, except for being able to whip the lard with a little hand mixer), I kept working on it, and hoped the Maseca would eventually absorb all of that liquid. It did, and the masa turned out absolutely perfect. :-)
    Thanks again, and God bless!

I am just starting to study about tamales to make them myself because they are so expensive. I had no idea of the complexity of the dough ! The directions on the bag for tortillas is simple, just mix with water. Whatever did the cook do if there was not a Mixmaster ! ? This video is a good education. I now understand why they are costly.

I live up North in the Arctic Circle and never have tried tamales (I'm still not sure what they are) - My sisters mother-in-law brought over some of those long dried mexican chillies, corn husks and Hatch green chilli. Finally I know what to do with them, now to find some of that flour and lard :) I'm going to marinade pork and chicken in Red Chile overnight and oven roast them on low temp and make homemade salsa (I'll try boiling the tomatoes and chillies, then blending them with raw onion and cilantro)

Hi Gloria, I'm going to try this recipe soon, but I'm confused about something. In the video, you added the salt and baking powder to 1 1/2 cups of chicken broth. However, the ingredients in your list above calls for 3 1/2 cups of broth. Should I use 1 1/2 cups only? Thank you!

    • @johncunningham3009
      @johncunningham3009 2 года назад

@@pilateshalemaui3845 Gosh, I can't remember. It was a while ago. I did moisten the instant maseca with broth to form a rough mass, which I added bit by bit to the beaten lard, as I recall. When Gloria says to beat the lard for 20 minutes or so, she's serious. It turns so white, light, and fluffy, like whipped cream! Hope that helps ..

Hi Gloria!!! Hope you had a great thanksgiving!
Thank you for this recipe! U are such a good teacher! Your instructions are so clear!
I’m trying to make a vegan version but honestly I can’t get them soft and fluffy w the crisco veg shortening in comparison to the lard. The lard is the best. Do u think I shud add more baking powder? Or extra whip the crisco? Like maybe whip it 30 mins? Any feed back wud be awesome. Trying to make these for my vegan friends but the crisco veg shortening is challenging.
Again you are terrific and thanks for sharing!!!!!

hello my friend i recommend that you whip the Crisco until it has changed color to a bright white and that should work great for you.

I don't know what Gloria does, but I do warm my broth before adding. I think it makes it easier to mix.

Great video! I’m wondering if you are familiar with adding anise to the masa. I know of the anise tamales but the whole seeds are added. My mom made a tea of some sort using the caldo and added it to the masa. Are you familiar with how to do this? Mom passed away and she told me it a secret that her mom showed her. Pls help. Thank you for your videos.

Hello Gloria, I am really excited to make this recipe. I have watched the video several times and read the comments over the confusion of the amount of broth, You mentioned in the comments that you did end up using 3 1/2 cups of broth, but even after watching 3-4 times I only saw you add 1 1/2 cups with the salt and baking soda. I am so confused and very embarrassed that I don't get when you added the rest of the broth. Please help :)
