I use 1 lb of lard or shortening for 5 lbs of masa to be prepared. This is my mom's way and the tamales come out very tasty and soft never dry. The husks smooth side is where I place the masa it helps to seal in and for steaming to use the smooth side plus the tamale will stick on the other rougher side. Great video!

Lots of times the best results are from hand kneading. One step at a time. All of the ingredients blend perfectly and the finished product is almost always delicious.

Isn’t funny how all of us Hispanics do the same exact things when making tamales? I measure my ingredients the same exact way.😂😂 I use a tortilla maker to spread the husks. 😊

This was truly old school and homemade, my mama would would put Chile powder for color in the masa ,they were delicious and her buenelos were awesome, thank you for sharing

Hey Margaret, This is my first time to visit you, and I'm so Happy I did. I just wanted to let you know I don't use a Kitchen aid but I do use my Kitchen aid hand mixer. I make 5 pounds of Masa at a time just to be sure I can get everything mixed well. I will mix it for about 7 minutes and the masa get so nice and fluffy and soft, and when you cook them they are soooooooo good. Not heavy, soft great tasting Tamales too. I wouldn't make them any other way now that I know this trick of my hand mixer....

Hello Margaret! have a question please, I grew up with my Mom and Grandma using the fresh masa would it be the same amounts, masa, baking soda and salt, with that?? Thank you and Loved your video definitely reminds me of watching and helping my Mom who is not with us anymore. Reminds me of how my grandma cooked. No measuring cups or spoons. She just eyed it and knew how to always make the best tamales and everything else.
I love watching this. I love the stories that were told. I need your help! My daughter gave me tamales that she bought from someone. They are so pland. There are no spices in them. Can I take them apart and add some spices to them and put them back together? If so, how do I go about doing it?

I personally have never done that, except to add salt before eating it.
Just add a spicy salsa on top. My husband likes to warm them up and serve with an over easy egg on top for breakfast.

All of the spices are in my blended Chile, the masa is prepared with the broth of the meat, I only add salt to the meat

No, the rough side goes out. You spread masa on the smooth side. If you can’t tell just scratch with your nail and you can feel the rough side. Because if you spread your MASA on the rough side, your tamales will stick.

Sister, you can also use the package of Maseca para tamales and it’s more coarse… melting the Manteca in a small saucepan can save you time also. Keep shining for Jesus.

Been trying for years. I can get the meat and masa to taste great but I’m horrible at the steaming time. So many different opinions on RUclips. How many minutes/hours should you steam them in your experience?
I used my stock pot (usually, I use my pressure cooker with my knee injury. I used my stock pot. It is not as heavy). 1/4 filled with hot water, added the tamales (I stood them up for the first time). Brought the pot to a rapid boil, covered pot, lower heat to low and cooked for 2 hours, and let rest for 1 hour before eating.

To test them take one out after the recommended cooking time, let it rest for a couple of minutes and peel back the hoja. If any of the masa sticks to it, it's not done yet, out it back and cook a little longer.
Also, make sure you're putting the masa on the 'right' side of the hoja. The smoother side. If you run your nail across the hoja, the smoother side is where you'll spread your masa.
