MASA TO MAKE TAMALES IS SO EASY IS NOT EVEN FUNNY

  • I am sharing the way I started making tamales, when I was a kid I hated making tamales it was so much work making the masa and spreading the masa into the corn husk , but know I am going to share with you an easy way is not even funny. Now I love making tamales is so easy and so fast. Here is the recipe for the masa but I also have 2 more tutorials to show you how to make a chicken with green sauce filling and a rajas with cheese filling they are here in my channel.
    MASA FOR TAMALES THE EASY WAY
    1 Kg or (1,000) grams of maseca for tamales
    8 cups of chicken broth ( it needs to be very hot)
    2 cups of oil regular cooking oil you can also use vegetable shortening or lard / make sure you melt the shortening or the lard before you use it
    3 tsp of baking powder this will help the masa for the tamales be more fluffy
    corn husk they need to be soak in hot water for 25-30 mins. you want them to be nice and soft before you use them
    Kitchen aid mixer but not necessary
    **** I really don’t use salt I use the know suiza chicken broth (powder) to give all my food dishes flavor but you can use the salt if you prefer

      @@doratiscareno5856 yes is better! for example if you are making chicken tamales use the chicken broth from the chicken and if you are making beef use the beef broth from the meat

      @@doratiscareno5856 yes is good , If your chicken broth tastes good the masa is going to taste good to. Give your chicken some flavor. when you boil the chicken remember you are using the chicken broth for the masa 👍🏼😉

      You can use crisco and a little healthier than that lard maybe to keep authentic taste and from being dry tamale chokers

    Thank you so much. Whenever you ask someone about making tamales they tell you it is a lot of work. I made cheese and pepper tamales in no time flat. I used the same Maseca you used and Manteca lard melted in the microwave. They came out perfect your instructions were perfect and I hand mixed mine. Will be looking for more of your videos.

    Thank you for your recipe. I use my kitchen aid mixer for everything because I have bad wrists and cannot knead anymore 😔. Also, I cannot use lard and needed a recipe used with vegetable shortening. This video helped so much.

    I really love this recipe and the very first time I made tamales it came out perfect. But now, its been 3 more attempts and my masa doesn’t cook fully. I don’t know what I am doing wrong, I have followed you recipe precisely and have even tried putting less and more of the chicken broth thinking maybe I put too much liquid but I’m still having the same problem. I’m hoping maybe you might have some insight as to what I might be doing wrong

      It's ok just cook them a little longer and let them rest when they are done for 20 mins or so

    Do you put the whole bag of maseca in the mixer at the beginning? when you say you can use lard, do you melt two cups of lard and use instead of the oil? How long do you let the masa sit after you prepare it and before you assemble the tamales?

      Yes for this recipe I added the whole bag. And yes if you want to use lard make sure you melted first. The amount of lard is the same as the oil. I let the masa rest for 15-20 mins and make sure is cover with a kitchen towel 😉👍🏼

    Hi, thank you for sharing! I’m hoping to make tamales soon. I’ve never made them on my own from start to finish.
    Does the masa come out moist using this technique?
    Do you ever test the masa by dropping in some in a glass of water? If it floats, that means it’s ready. I’ve seen this done in other videos.

      M GM yes they do , they taste really good with this masa. You can also make tamales with beef, chicken and also rajas con queso . Check out the chicken recipe and the rajas con queso here in my channel

    This is such a pleasant breath of fresh air. Trust me, I've tried tamales from SO MANY different restaurants, so I'm pretty sure I can safely say that most of them most likely DO NOT use enough broth or manteca (pork lard) in their masa, so the result is a very dry, crumbly (NOT a good trait to have for masa!), bland and tasteless masa. In my opinion, masa should be just as flavorful as the meat/vevetable filling itself.
    I don't know if the dry masa is actually the way Mexicans like their tamales, if it is in fact a huge oversight by the restaurant. I'm willing to bet it's the latter. I'm sure no one likes to eat chalk.
    I just had some homemade tamales the other day that were made by my friend's mom, and i swear by the tamale gods, it was LITERALLY THE BEST TAMALE I'VE EVER HAD IN MY ENTIRE LIFE!
    THE MASA WAS SO MOIST, PERFECT CONSISTENCY LIKE A STEAMED BUN, AND HAD SO MUCH, IF NOT MORE PORK FLAVOR THAN THE ACTUAL LITERAL PORK INSIDE! I was so pleased with it, I ended up eating ALL the masa by itself before I actually ate the pork. It was THAT GOOD.
    Also, another thing that i think helped with the overall flavor, was that the tamale had a small slice of COOKED POTATO, to enhance the moisture even more.
    P.S., Is it ok if I add a little bit MORE broth to the masa than you did? It's very important to me that the masa has a lot of meat flavor too, so i can enjoy the ENTIRE TAMALE, and not just the meat filling. In case you didn't figure it out, I'm a hardcore meatlover to the soul, lol.

      :) of course you can the more flavor you give to your meat the better for your tamales. Your friend's mom used pork lard to make the masa. This is another way of making the masa you have to mix the lard until nice and fluffy and then you start adding the maza and the broth (chicken, beef or pork) you mix all together until you get a nice spreadable consistency. I think some restaurants make their tamales like that because they are trying to save money on their ingredients :( and that is not a good thing because they won't keep their customers. I like my tamales with a lot of meat and less masa. But I know a lot of people that make tamales without meat. The good thing about making homemade tamales is that you can make them with lots of meat :)

      You can definitely add more broth, my masa comes out wetter than this video. Your friend's mom probably used the broth from the cooked pork. Along with lard, it gives the masa an incredible flavor. I've experimented with using water, store bought broth, a combination, etc. ..always use the broth you cooked your meat in for maximum flavor. ETA, I am a hardcore carnivore too! 😁

    Thank you so much. My husband is from Mexico and we tried so many times they just aren't as good as his momma's recipe. I hate the corn husk I aiak them in hot water n they are so small. Can I use foil in place of the corn husk. I see elsalvadoren people do it.

      It depends what size you make them, I made like 50 and that’s because I like to add a little masa a d. Ore meat 😁and yes you can make 1/2 of the bag. For a 1/2 lb of maze a is 3-1/2 cups and last week I made that amount of sweet tamales and I got like 45 but they are smaller 👍🏼😉

    Is the recipe the same if you just use the regular maseca? My grandma passed away last Monday and she used to be the one to make the masa or we would buy it from the store in California. I moved to Illinois and I want to try and make it by myself for the first time this year.

      I am so sorry about your grandma ma she rest in peace. Good question you mean the masa that is ready to mix with the rest of the ingredients? I haven't done the recipe that way. I am sorry bur you are giving me an idea. I need to try making them with that maseca

      @@candi4766 I am sorry I think I misunderstood when you said regular maseca I was thinking the dough that is made and you have to add more stuff to it but yes you can use the regular maseca the one that has no picture of tamales on front. Thats perfectly fine

    I know that this is a masa making video, but I LOVE masa. I can only get tamales like, once a year, which SUCKS. But when I get old enough to buy things make stuff without my mom killing me, is there anyway you can make a masa tamale? Just masa? I like it either way, but plain masa is great. I love natural flavors. Sorry for overexplaining. I do that

      hahaha don't worry I like to over explain myself. ;) you can buy masa from the store that is already made. This is the only way that I make my tamales because I use oil and not lard. I do have another recipe but is using lard.

    Ive made tamales 3 maybe 4 times, and have always bought my masa pre-made. I mix reg masa and pineapple masa together, (using a less pineapple then I do reg masa) anyway, I also make some without the pineapple masa, but the ones with the pineapple masa mix always go SO fast, I can never make enough. ANYWAY, my point being, Is, im going to try making the masa using your recipe, but want pineapple the flavor. Should i just add the juice from a can of crushed pineapples (in its own juice, not sweetened) in place of some of the other liquid, and perhaps just a little bit of the crushed pineapples...

    If I want to add a chili sauce to your masa recipe would I just adjust the amount of broth I add so as not to make it too watery?

      Yea omit 2 cups of chicken broth and add a cup of chili sauce if it's not right consistency then add another cup of broth

      @@tonyhaltmar5982 Hello Tony, I used 1 kilo total of maseca if you are using the measuring cups that come in a set 1 cup, 1/2 cup 1/3 cup & 1/4 cup the total of maseca is 8 cups and 2 cups of oil and yes you can mix lard but I recommend for you to liquify the lard first using the microwave or the stovetop . This way you can have the 2 cups of fat that you need. The reason why is because if you use the lard alone you need to cream the lard first to make the masa. (is a process that takes longer) Now when you add the liquid start adding the liquid little by little because you might not need all the liquid that I used or you might need a little more or less. The altitude where you live my change the amount of liquid that you are going to use. I hope I am not confusing you but if you need more help please let me know! ;) blessings to you too

    Ahhh, so adding baking powder will help puff up this dough. I tried making puffy tacos, but I used the same bag you prefer, the one with tamales on it. It didn't puff up. I also rolled the dough, as I don't have a tortilla press.
    I can't wait to try this recipe. I just found it on a Google search for the Maseca I used.

      Well this is the reason why I make tamales know, before I did not like to make them because I hated doing the mixing by hand and doing the water test 😁using this method is a lot easier and you don’t do the water test.

    I just tried this for my tamales and they are staying really mushy even after cooking for 2 hours. Help! I think maybe the mix was too wet. Any advice? Should I keep cooking the tamales or give up?

      If you are using the pot make sure you cover them using extra corn husks on top if you got extras and if you don’t use a kitchen towel you don’t want any steam to get out. After the time you let them cook let the rest for at least 20 mins ands is normal if they are a little mushy they will become firm. If you are using the IP cook them for 45 mins and let them rest for 10 . I hope this helps you 👍🏼😉

      When I make the chicken broth I start by adding 1 Tbs and then si go from there, you add more if you need it. Add 1-2 Tbs to 8 cups of water.
