My kids have been asking for me to make cheesy onion rings for a while, but I've put it off because it's not the healthiest. Eventually I decided to make it healthier by cooking them in the air fryer and eliminating a lot of the oil and fat. The Air Fryer Cheesy Onion Rings came out crispy and delicious. The recipe was also simple and actually fun to make. Next time I will have the kids cook with me.
Ingredients:
1 large onion
4-6oz mozzarella cheese
2 eggs
1 cup all purpose flour
1 tbsp. salt
1 tbsp. garlic powder
2 cups panko crumbs
olive or avocado oil spray
Instructions:
Slice onions about 1inch wide.
Take two rings and insert mozzarella cheese in between. Make sure it's stuffed really tight so the rings don't fall apart
Whisk eggs in separate bowl.
In another bowl add flour, salt and garlic powder.
In another separate bowl add your panko crumbs.
Dip your onion rings in flour first, then egg wash, back to flour, back to egg wash and finally into panko crumbs.
Really pack on the panko crumbs so you will have good crispy out around your onion rings.
Spray with oil on both sides and air fry at 400˚ for 15 mins or bake at 425˚ for 17mins.
