    これはうまそう!私も4年ほど前に豚のゲンコツで出汁をとってラーメンを作りましたが、時間がかかったわりにはスープは今一でした。ゲンコツではない豚のガラはどこで買えますか?

    Chef ..Arigatuhgozaimasu for this receipe.i saw most people teach ramen using instanst soup or msg powder. but here totally teach to cook from scratch.i have try it.the soup and the meat is delicious👍.it spend time but worth to cook it.will try out other receipe also. Japan ramen is delicious...

    骨とブロック肉は近所のスーパーで仕入れています。
    あまり大きなスーパーではないのですが、肉、魚とも、とても安く買えるお店なので助かっています。
    ちなみに豚の背ガラは100g30円以下で買えましたよ^^

    dumb question, but are you using the miso sauce you made on the pork, or are you glazing it with the marinade?

    Some people tie the meats so they hold their shape while cooking, other just let it flop around. You tie the meat and hold its shape for a more presentable plating, rather than having a weird floppy piece of meat in your bowl.

    The pad of butter to top off is interesting. Is that common for ramen in Japan?

      It certainly is. There is a popular type of ramen called butter-shoyu (soy sauce) ramen, which is frequently topped with corn. It's quite tasty.

      エイジスロー I know that this recipe is miso ramen. But there IS shoyu butter ramen, at least in Tokyo where I partly grew up (I am Japanese American).

      +Michael Yang It might go bad if you don't put it in the freezer so don't marinate it for longer than that.

    Huh? You have to Marinate it for FIVE DAYS!? So it would be best to marinate it THEN boil on the day you make the meal, right?
