What do you do for the Model who is very self conscious about their quote "double chin" and they insist you don't crouch down because they fear that angle? Have you ever been in this situation before?

Can it be fixed, if you don't have any way to be there at sunset or so? Doing a day walk, because you are busy with other stuff in the evening?
I have taken pictures wrong by having the person in the shade to avoid the sun and removing all pictures that are dark

Yes, making models comfortable in photo shoots is important. Try to engage them in small talk so that their posing will look natural. :)
