  • When you think of ramen in Japan, you most often think of Tonkotsu, or Shio, or Shoyu, or even miso, but how often does Chuka Soba come to mind? We’re going to show you the OG of Ramen in Japan, and take you to Katsumoto Ramen, where they make an incredibly delicious bowl of Chuka Soba.

    Thank you guys so much for doing what you do. I drove an hour to go to the international food store. It had so many Japanese goodies that I am excited to try. Tonkatsu flavored udon noodle soup, taiyaki, steamed vegetable buns, Ramune soda and so much more that I would have never considered trying if it wasn't for you guys. You have made me venture out of my tiny food bubble and I am thankful.

      I also joined the sad ramen 🍜 club after watching this. The only saving grace of my ramen was that it was Shin Ramuyn and I had awesome power ups from Martina to make it better. But it slowly became saltier as more of my sad sad tears fell into it. 😭

      Amanda Nussbaum I think you misunderstand my statement. We know that most Japanese are very proud of their language and not all of them are fluent in English. There're also some people rather speak in their own mother tongue than in English because they might be afraid of people make fun of their accent/grammar mistakes/etc... or they're uncomfortable of speaking in other language. Instead he doesn't have that mindset and spoke casually in for Simon and Martina's audiences. I'm not disrespecting the other chef at all.

      Amanda Nussbaum I'm assuming you're fluent in English and if you're bilingual or a polygot then you know that it takes confidence to speak in a language that's not native to your own without worrying how the other person who is fluent is going to respond. So why shouldn't someone commend someone for speaking in a different language? It's an incredible skill. That doesn't diminish the respect or the skill of the other chef. One person's skill or accomplishment doesn't diminish another's skill or accomplishment.

    All ramen is an adaption of Chinese soup noodle dishes. Ramen= La mian= Chinese hand stretched noodles. Similar to hand pulled egg noodles found in chaomein. But as every region and town has their version of the same dish, we should still try them all for the love of Ramen!

      AZ la mian is usually very specifically northern style of noodles, it is an art form. Chaomein on the other hand, especially how it’s been deeply fucked into the abomination that it is in the west, is absolutely disgusting. It shouldn’t even be considered food.

    I really appreciate your recent videos. While they are paid promotions (which you make announce which makes you even more trustworthy), I never doubt that you enjoy the food you are eating. Your are too happy eating it for it to be any Other way! Currently you guys are helping me make a bucket list of foods I want try on my honeymoon! I would have never known about all these great places without you. Thank you!

      I went to Tanaka Sobaten in Akihabara which serves chuuka soba. I’m Chinese so I can definitely taste the similarities with the noodle texture. Ramen after all was introduced by Chinese (lamen in Chinese). It was delicious!

    I went to Katsumoto Ramen during my last visit to Tokyo and I can say that it was the best bowl of Ramen I've ever had. It's amazing how in a Ramen paradise like Tokyo with so many fantastic places to eat ramen, Katsumoto delivers a masterpiece like this Chuka Soba. I stayed in Tokyo for 10 days and I need to go back there every day LOL. I tried all the combinations, all the broth thickness they have available and Wow, its perfection. Thank you very much guys for letting us know about this Gem.

    After going to Katsumoto's for Chuka Soba and coming back to watch this video months after my experience, oh my god it brings back so many memories of trying to find the place, then learning to use the ordering machine, the young lady that assisted me, and then having the Chuka Soba and especially remembering the words of one of the chef's saying "I want you to drink the broth first" and then finding how different that broth was to anything I'd had before just makes the memory right now after revisiting this video just so...wow, it makes me say "I actually got to go there and try that amazing food", so thank you, for sharing that with us, and in an odd way giving those of us who follow you the courage to go try it ourselves!

    my favorite ramen spot in tokyo is Tsuta Soba in Sugamo!! i first found out about it in the short 4-episode j-drama “Ramen Daisuki Koizumi” (it’s about a girl and her love for ramen; all shops mentioned in the series are real Japan restaurants) and during each of our last two visits to Japan we made sure to go early in the morning to buy a ticket for lunch.. it’s the best bowl of noodles and soup i’ve ever had in my life. 🤗😍 it would be awesome if you checked out some places from the series (jiro ramen maybe?? I tried and couldn’t finish the bowl it was too insanely massive) and please go to tsuta!!! I’d recommend it highly to anyone who goes to tokyo ❤️ thanks simon and martina for the delicious content!!!!

      Ramen is Chinese food, and Chuka soba literally mean Chinese soba. Chuka 中華 is the Japanese word for ''Chinese food'', they intentionally don't translate it.

    My friend is going to Japan in a few months on holiday with her boyfriend. Problem is she's allergic to all seafood, not in an anaphylaxis way though so not that dangerous. Could you guys make a list of things that don't have seafood in them? I want her to experience Japan properly 😄

      That could be a bit of a problem, because seafood is used widely in Japanese cooking. Even things that you might not expect to have seafood in may have been prepared using a seafood based stock (dashi). For example vegetables may be cooked in dashi, a salad dressing might contain dashi, miso and other soups will contain dashi, the okonomiyaki batter will contain dashi etc. Also salads may contain seaweed (is she allergic to seaweed?). Your friend better double check with the staff.

    Katsumoto was on TV several days ago. That chef was the chief cook of a famous hotel. And several gourmet critics said maybe this restaurant will be on the Michelin Guide.

    You gotta try Toyama black. The flavor is so deep, and our favorite shop loads up your bowl with incredibly tender atsu-giri chashyu. It's just this small ramen-ya / izakaya, but it probably has the best ramen in Hokkuriku.

      Shop's name is めん八, by the way. But come to think of it the noodles are pretty thick so it might not be your style.

    Chuka (中華) means ''Chinese food''. So, Chuka Soba or 中華そば means ''Chinese noodles'' or ''Chinese soba''.
