  • 今天方太找了方妈妈和大家分享她的拿手辣椒酱,可以耐很久又非常方便。想要快速准备一道咖喱料理,就放几汤匙方妈妈的辣椒酱,加点咖喱粉和咖喱叶就可以煮出香喷喷的咖喱菜肴了。要煮酸的叻沙,就只需要加几汤匙辣椒酱,加点叻沙花,越南香菜或香茅就可以了。那么多用途,又可以方便制作出不同的菜肴,大家不妨试试!
    Today Justine will be sharing her mom’s specialty: multi-purpose chilli paste. This paste can last long and is very convenient to prepare curry or laksa dishes. With just a few tablespoons of chilli paste, you can add curry powder and curry leaves to prepare a quick and aromatic curry dish. For sour laksa, take some chilli paste, simmer with torch ginger flower, Vietnamese coriander or lemongrass and you will have an awesome laksa dish ready.     材料 ingredients
    1. 200-300g小葱头200-300g shallots
    2. 15粒蒜瓣15 garlic cloves
    3. 12根香茅(切幼)12 stalks of lemongrass (dice finely)
    4. 50g黄姜 (切幼)50g turmeric (dice)
    5. 120g辣椒干(热水浸泡后过水)120g dried chilli (soaked and rinse with hot water)
    6. 6 red chillies 6条红辣椒
    7. 15 bird’s eye chilli 15条小辣椒
    8. 3tbsp belacan powder 3汤匙峇拉煎粉
    9. 3-4 tsp salt 3-4茶匙盐
    10. 2-3 tsp sugar (to taste) 2-3 茶匙糖
    11. Half tsp chicken stock 半茶匙鸡精粉
    12. Shallot oil for frying 葱头油
    13. 峇峇牌子咖喱粉 Babas meat/ fish curry powder

    How come Teochew mum but speak the Hokkien language 😅
